Abstract

Penelitian ini dilatarbelakangi oleh hasil pengamatan penulis sebagai guru praktikan di SMKN 9 Bandung bahwa pada kegiatan praktikum Boga Dasar siswa belum cukup menerapkan ilmu pengetahuan kompetensi dasar “Peralatan Pengolahan Makanan” hal ini dikarenakan masih banyak kekeliruan yang dilakukan oleh siswa terutama dalam hal pemilihan alat pada pelaksanaan kegiatan praktikum. Tujuan penelitian ini adalah untuk mengetahui sejauh mana pengetahuan siswa tentang peralatan pengolahan makanan meliputi alat persiapan, alat pengolahan, alat penyajian serta teknik perawatan dan penyimpanannya. Metode penelitian menggunakan metode penelitian deskriptif dengan jumlah populasi 149 orang. Teknik simple random sampling digunakan untuk menentukan jumlah sampel, sehingga didapatkan jumlah sampel sebanyak 60 orang. Hasil penelitian pengetahuan siswa mengenai alat persiapan berada pada kriteria baik karena lebih dari setengahnya (73%) responden mampu mengetahui dengan tepat, pengetahuan tentang alat pengolahan berada pada kriteria cukup baik karena setengah (50%) responden mampu mengetahui dengan tepat, pengetahuan tentang alat penyajian berada pada kriteria cukup baik karena lebih dari setengahnya (58%) responden mampu mengetahui dengan tepat dan pengetahuan tentang teknik perawatan dan penyimpanan berada pada kriteria kurang baik karena kurang dari setengahnya (33%) responden yang mampu mengetahui dengan tepat. Berdasarkan hasil penelitian, pengetahuan siswa teknik perawatan dan penyimpanan menunjukkan hasil kurang baik, untuk itu penulis memberikan saran agar materi tersebut lebih ditekankan dalam proses pembelajaran agar pengetahuan siswa mengenai peralatan pengolahan makanan semakin berkembang serta dapat menerapkannya dengan baik dan benar dalam kegiatan praktikum. Kata Kunci : Pengetahuan, Peralatan Pengolahan Makanan, Praktikum, Boga Dasar The research is motivated by the results of the observation of the author as a teacher practice in SMKN 9 Bandung on the activities of Boga Dasar Student not enough to apply basic science "Food Processing Equipment" this is still a lot of mistakes made by students in terms of selection of tools implementation. Activities lab research objectives this is to find out how close the students are about the equipment's dessert processing equipment, the processing tools, the presentation tools as well as the maintenance and storage techniques. The research method used descriptive research method with population of 149 people. A simple random sampling technique is used to determine the number of samples, resulting in a total sample of 60 people. The result of the research of the students knowledge about more than half (73%) of the respondents are able to know exactly, the knowledge of the processing equipment is in good enough criteria because half (50%) of respondents are able to know exactly, the knowledge about the presentation tools be on the criteria is quite good because more of the half (58%) of respondents were able to know appropriately and knowledge of maintenance and storage techniques was in poor criteria because less than half (33%) of respondents were able to know exactly. Based on the results of research, students 'knowledge of processing tools and techniques showed poor results, for the authors provide suggestions for the material is more emphasized in the learning process so that students' knowledge about food processing equipment growing and can apply well and correctly in practice activities.
