Abstract
Pesatnya perkembangan industri makanan dewasa ini ternyata belum sepenuhnya diikuti dengan peningkatan kemampuan tenaga kerja dalam menangani pekerjaan secara aman dan sehat, salah satunya adalah dalam penerapan prinsip higiene dalam pengelolaan makanan. SMK Jasa Boga berperan sebagai lembaga pendidikan yang mengantarkan hasil didiknya memasuki lapangan kerja di industri makanan secara profesional dituntut untuk mampu menghasilkan tenaga kerja yang tidak hanya memiliki kompetensi dalam pembuatan produk dan pelayanan makanan tetapi juga memiliki dasar perilaku sehat dalam wujud Perilaku Higiene Food Handleryang baik sesuai dengan tujuan tuntutan kompetensi.Penelitian ini bertujuan untuk mengimplementasikan pembelajaran model InquiryBerbasis Self Control(IBSC) untuk meningkatkan perilaku siswa dalam hidup sehat. Penelitian dilakukan di SMKN 3 Cimahi pada siswa kelas X Program Keahlian Tata Boga. Metoda yang digunakan adalah quasi eksperimen dengan desain non equivalen control group pretest postest. Variabel perilaku yang diamati meliputi aspek pengetahuan, sikap dan tindakan hygiene. Model pembelajaran IBSC yang diimplementasikan diadop dari Inquiry yang digunakan oleh Massalas & Cox dengan memasukan unsur model Self Control yang digunakan oleh Averyl dengan mengadop tahapan dari Bruce & Weill. Pada prinsipnya langkah pembelajaran tetap menggunakan langkah inquiry yang terdiri dari 6 tahap akan tetapi kegiatan yang berlangsung pada setiap langkah memuat variabel self control yang diarahkan untuk menggiring terjadinya perubahan perilaku pada siswa yang meliputi memperkenalkan prinsip perilaku, membangun landasan berpijak, menyusun program kontrol diri dan memantau serta memperbaiki perilaku.Hasil penelitian mengungkapkan model IBSC efektif meningkatkan pengetahuan siswa tentang hygiene (N-gain=0.70, pada kategori tinggi) dengan rata-rata skor postest 86.68. Model IBSC efektif meningkatkan sikap hygiene siswa (N-gain=0. 62, kriteria sedang) dengan rata-rata skor postes 92.45. Model IBSC efektif meningkatkan tindakan hygiene siswa (N-gain= 0.73 pada kriteria tinggi) dengan nilai rata-rata postest sebesar 92.45. Model IBSC efektif meningkatkan Self Control siswa (N-gain=0.58 kriteria sedang). Sebesar 73.7% siswa merespon senang pada pembelajaran model ini. Rekomendasi ditujuan bagi guru untuk menerapkan model ini namun menuntut kesiapan, motivasi, kreatifitas dan komitmen yang tinggi. Bagi sekolah direkomendasikan untuk meningkatkan kualitas kinerja dan wawasan guru dengan semakin meningkatkan kesempatan pelatihan dan workshop, serta meningkatkan kelengkapan sarana, fasilitas lingkungan pembelajaran Kata kunci: Inquiry, Self Control, Perilaku Higiene, Siswa SMK The rapid development of food industry today's had not fully followed by an increase in the workforce's ability to handle the job safely and healthy, one of which is in the application of the principles of hygiene in food management. Vocational School of Cullinary Program role as educational institutions that results their students to be the workforce in the food industry in a professional manner is required to produce a workforce that not only have competence in the manufacture of food products and services but also has a base in the form of healthy behavior Behaviour Food Handler good hygiene in accordance with the objective demands of competence. This research aims to implement the model of Inquiry-Based Self Control (IBSC) Learning to improve healthy behavior student. The study was conducted at Vocational School3 Cimahi in grade 10. The methods used are quasi-experimental design with non-equivalent control group pretest posttest. Variables observed behavior includes aspects of knowledge, attitude and practice of hygiene. IBSC learning model adopted from Inquiry used by Massalas & Cox by integrated Self Control element adopted from Averyl. In principle, IBSC moled still use step of inquiry learning which consists of six stages but the activities that take place at each step variable load self-control that are directed to herd behavior change in students.The results of study revealed that IBSC model effectively improve students' knowledge of hygiene (N-gain = 0.70) with an average score of posttest 86.68, effectively improve hygiene attitudes of students (N-gain = 0.62) with an average score of posttest 92.45 and effectively to improve hygiene behaviour (N-gain= 0.73) with an average value of 92.45 postest. IBSC model effectively improve students' Self Control (N-gain = 0.58). Amounted 73.7% of students responding happy on this model. Recommendations are geared for teachers to implement this model and olso requires readiness, motivation, creativity and commitment.
