Abstract
Keterampilan konkret merupakan keterampilan lebih bersifat merujuk kemampuan fisik pada ranah psikomotor Meniru, Manipulasi, Presisi, Artikulasi dan Naturalisasi. General Service Procedure American Service adalah salah satu materi mata pelajaran tata hidang dari turunan KI dan KD 3.6 menentukan pelayanan makan dan minum restoran, KI dan KD 4.6 melayani makan dan minum di restoran. Tujuan umum dalam penelitian ini adalah untuk memperoleh gambaran mengenai keterampilan General Service Procedure American Service. Tujuan khusus dalam penelitian ini adalah mendeskripsikan jenis keterampilan General Service Procedure American Service pada ranah psikomotor (1) Meniru, (2) Manipulasi, (3) Presisi, (4) Artikulasi (5) Naturalisasi. Metode penelitian yang digunakan dalam penelitian ini yaitu metode penelitian deskriptif analitik. Populasi dari penelitian ini adalah siswa kelas XII Jasa Boga dengan metode pengambilan sampel teknik sampling purposive yaitu 25 siswa yang berencana mengikuti uji kompetensi Tata hidang. Instrumen yang digunakan dalam penelitian ini berupa skala penilaian mengacu kepada Kriteria Unjuk Kerja (KUK). Teknik pengumpulan data yang digunakan adalah skala penilaian (rating scale) dan observasi. Berdasarkan temuan dalam penelitian ini, dapat diketahui bahwa Hasil analisis keterampilan responden pada setiap ranah psikomotor (1) Meniru yaitu 72 % yang menunjukkan berada pada kategori Sangat Terampil dalam Meniru. (2) Manipulasi yaitu 76 % berada pada kategori Sangat Terampil dalam Manipulasi. (3) Presisi yaitu 80 % berada pada kategori Sangat Terampil dalam Presisi. (4) Artikulasi yaitu 36 % berada pada kategori Terampil dalam Artikulasi. (5) Naturalisasi yaitu 56 % berada pada kategori Terampil dalam Naturalisasi. Kesimpulan dari keseluruhan keterampilan konkret setiap responden yaitu lebih dari setengahnya berada pada kategori Terampil.;---Concrete skill is more physical skills which tend to refer the skill starting capabilities on psychomotor field of imitation, manipulation, precision, articulation and naturalization. American Service of General Service Procedure is one of the tata hidang subject matter which is the derivative from KI and KD 3.6; determines eating and drinking restaurant services KI and KD 4.6; serves food and drink in restaurant. The general objective of this research is to gain an overview of the skills of American Service of General Service Procedure. The specific objective is to describe the type of American Service of General Service Procedure skill on psychomotor field (1) Imitating, (2) Manipulation, (3) Precision (4) Articulation and (5) Naturalization. The research method used is descriptive analytic method. The population of this research is 12th grade student of Jasa Boga with the purposive sampling technique with 25 students who plan to follow the competency test of Tata Hidang. The instrument used is the rating scale which refers to the Performance Criteria (KUK). The data collection technique used is the rating scale and observation. Based on the findings in this research, it can be seen that the results of the analysis skills of respondents in each psychomotor field (1) Imitating which 72% is in the category of Highly Skilled in the Imitate. (2) Manipulation which 76% is in the category of Highly Skilled in manipulation. (3) Precision which 80% is in the category of Highly Skilled in precision (4) Articulation which 36% is in the category Skilled in articulation. (5) Naturalization which 56% is in the category Skilled in Naturalization. The conclusion from all the concrete skill of each respondent is more than half of them are in the Skilled category.
