Abstract

Penelitian ini bertujuan untuk menghasilkan buku teks kimia berupa buku teks yang relevan dengan kompetensi keahlian tata boga pada materi nutrisi yang dibutuhkan oleh tubuh. Bahan ajar ini dikembangkan menggunakan metode Four Steps Teaching Material Development (4STMD). Metode penelitian yang digunakan adalah Development Research (DR) yang terdiri dari tiga tahapan yaitu design, development, dan evaluation. Tahap design dilakukan dengan cara menganalisis dan merencanakan jenis bahan ajar yang akan dikembangkan. Pada tahap design diperoleh rancangan bahan ajar. Tahap development yaitu pengembangan bahan ajar menggunakan metode Four Steps Teaching Material Development (4STMD) yang terdiri dari empat tahap yaitu tahap seleksi, strukturisasi, karakterisasi dan reduksi diktaktik. Tahap evaluation dilakukan tahap uji kelayakan yang dilakukan oleh lima orang guru di SMK dan uji keterpahaman bahan ajar oleh seratus siswa SMK. Pada pengembangan bahan ajar tahap seleksi diperoleh indikator pencapaian kompetensi dan label konsep yang dikembangkan dari Kompetensi Dasar. Pada tahap strukturisasi dihasilkan peta konsep, struktur makro dan tiga level representasi yang sesuai dengan materi nutrisi yang dibutuhkan oleh tubuh. Hasil tahap karakterisasi diperoleh 104 teks yang diujikan pada 100 siswa di beberapa SMK terdapat 7 teks kategori sulit yang kemudian direduksi didaktik. Hasil dari tahap reduksi didaktik adalah dengan penggunaan generalisasi, partikulasi dan kembali kepada tahapan kualitatif. Hasil tahap evaluation bahan ajar menunjukkan bahwa bahan ajar yang dikembangkan memiliki kelayakan sebesar 95,56% dari segi kelayakan isi, 82,14% kelayakan kebahasaan, 96,25% kelayakan penyajian, dan 97,57% kelayakan kegrafikan. Rata-rata keterpahaman yang dihasilkan yaitu 93,64% dengan kategori keterpahaman tinggi. Kesimpulan yang didapatkan dari hasil penelitian ini bahwa bahan ajar kimia materi nutrisi yang dibutuhkan oleh tubuh layak digunakan dengan keterpahaman tinggi. This study aims to produce a chemistry textbook in the form of a textbook that is relevant to the competence of culinary skills on the material of nutrients needed by the body. This teaching material was developed using the Four Steps Teaching Material Development (4STMD) method. The research method used is Development Research (DR) which consists of three stages, namely design, development, and evaluation. The design stage is carried out by analyzing and planning the type of teaching materials to be developed. At the design stage, the design of teaching materials was obtained. The development stage is the development of teaching materials using the Four Steps Teaching Material (4STMD) method which consists of four stages, namely the selection, structuring, characterization and dictactic reduction stages. The evaluation stage is carried out at the feasibility test stage conducted by five teachers at SMK and the test of understanding of teaching materials by one hundred SMK students. In the selection stage of teaching material development, indicators of competency achievement and concept labels developed from Basic Competencies are obtained. At the structuralization stage, concept maps, macro structures and three levels of representation are produced in accordance with the nutritional material needed by the body. The results of the characterization stage obtained 104 texts tested on 100 students in several vocational schools, there were 7 difficult category texts which were then didactically reduced. The results of the didactic reduction stage are the use of generalization, particularization and return to the qualitative stage. The results of the evaluation stage of teaching materials show that the teaching materials developed have a feasibility of 95.56% in terms of content feasibility, 82.14% linguistic feasibility, 96.25% presentation feasibility, and 97.57% graphic feasibility. The average comprehensibility produced was 93.64% with a high comprehensibility category. The conclusion obtained from the results of this study is that the chemistry teaching materials of nutritional materials needed by the body are feasible to use with high comprehensibility.
