Abstract
Latar Belakang: Keracunan makanan masih menjadi masalah kesehatan Masyarakat, terutama pada anak usia sekolah dasar. Rendahnya pemahaman siswa dan pedagang tentang hygiene dan sanitasi membuat jajanan sekolah berisiko. Kasus keracunan di SDN 1 Cimerang menegaskan pentingnya dilakukan penelitian, karena belum pernah ada studi yang secara khusus menggali praktik dan pemahaman terkait hygiene dan sanitasi di sekolah tersebut. Tujuan: Memperoleh pemahaman yang mendalam mengenai praktik hygiene dan sanitasi pangan jajanan anak sekolah serta persepsi, pengalaman, dan tanggapan para pedagang, siswa, dan pihak sekolah terhadap faktor-faktor yang berkontribusi pada kejadian keracunan makanan. Metode: Penelitian ini merupakan penelitian kualitatif dengan metode studi kasus. Subjek penelitian sebanyak 14 orang yang terdiri dari siswa, pedagang jajanan, dan kepala sekolah yang dipilih secara purposive sampling. Instrumen yang digunakan berupa lembar cheklist observasi dan panduan wawancara. Analisis data dilakukan dengan pendekatan analisis tematik menggunakan software NVivo 12 secara induktif yaitu berdasarkan temuan dalam data melalui project map, matrix coding dan word frequency. Hasil: Siswa masih sering makan tanpa mencuci tangan dan cenderung membeli jajanan di luar sekolah. Pedagang juga belum sepenuhnya menerapkan hygiene yang baik, seperti tidak menggunakan celemek, merokok saat berjualan, serta kurang memperhatikan kebersihan tangan, kuku, dan peralatan. Minimnya perhatian terhadap label, izin edar, dan sertifikasi BPOM. Makanan disimpan dan disajikan terbuka, sementara pengelolaan sampah tidak memenuhi standar. Upaya pengawasan dari sekolah sudah dilakukan, namun belum berjalan optimal karena lemahnya regulasi dan koordinasi lintas sektor. Kesimpulan: Personal hygiene siswa, kebersihan pedagang makanan, dan kebijakan sekolah di SDN 1 Cimerang masih belum optimal, yang berpotensi meningkatkan risiko keracunan makanan. Kata kunci: Hygiene Sanitasi, Keracunan makanan, Pedagang Jajanan, Personal hygiene Background: Food poisoning is still a public health problem, especially in elementary school-aged children. Students' and traders' lack of understanding about hygiene and sanitation makes school snacks risky. The case of poisoning at SDN 1 Cimerang emphasizes the importance of conducting research, as there has never been a study that specifically explores practices and understanding related to hygiene and sanitation at the school. Objective: To gain an in-depth understanding of the hygiene and sanitation practices of school snacks as well as the perceptions, experiences, and responses of vendors, students, and school officials to factors contributing to the incidence of food poisoning. Methods: This study is a qualitative research with case study method. The study subjects were 14 people consisting of students, snack traders, and school principals who were selected by purposive sampling. The instruments used were observation checklist sheet and interview guide. Data analysis was carried out using a thematic analysis approach using NVivo 12 software inductively, based on findings in the data through project map, matrix coding, and word frequency. Results: Students still often eat without washing their hands and tend to buy snacks outside the school. Vendors have also not fully implemented good hygiene, such as not using aprons, smoking while selling, and not paying attention to the cleanliness of hands, nails, and equipment. Lack of attention to labeling, distribution permits, and BPOM certification. Food is stored and served openly, while waste management does not meet standards. Supervision efforts from schools have been made, but have not run optimally due to weak regulations and cross-sector coordination. Conclusion: Students' personal hygiene, food vendors' hygiene, and school policies at SDN 1 Cimerang are not optimal, potentially increasing the risk of food poisoning.
