Abstract
Kesulitan dalam membedakan antara daging ayam segar dan daging ayam yang sudah membusuk menjadi masalah serius dalam industri pangan yang dapat membahayakan kesehatan konsumen. Penelitian ini bertujuan untuk merancang alat deteksi pembusukan daging ayam menggunakan sensor kapasitif interdigital yang mampu mendeteksi perubahan kapasitansi akibat gas pembusukan. Sistem yang dikembangkan melibatkan penggunaan komponen seperti mikrokontroler Arduino Uno dan sensor kapasitif serta pemrograman untuk pengolahan data. Pengujian dilakukan untuk menganalisis karakteristik sensor terhadap perubahan kapasitansi yang terjadi akibat pembusukan daging ayam. Hasil penelitian menunjukkan bahwa terdapat perubahan kapasitansi yang signifikan pada daging ayam yang sudah mulai membusuk di mana nilai kapasitansi meningkat seiring dengan bertambahnya waktu penyimpanan. Selain itu, ditemukan bahwa ketebalan daging berpengaruh terhadap nilai kapasitansi di mana peningkatan ketebalan daging menyebabkan penurunan nilai kapasitansi. Sistem yang dirancang dalam penelitian ini tidak hanya efektif dalam mendeteksi pembusukan, tetapi juga dapat menjadi alat bantu yang berguna bagi masyarakat untuk memastikan keamanan pangan.

The difficulty in distinguishing between fresh chicken and chicken that has spoiled poses a serious problem in the food industry that can endanger consumer health. This study aims to design a detection tool for chicken spoilage using an interdigital capacitive sensor capable of detecting capacitance changes due to spoilage gases. The developed system involves the use of components such as the Arduino Uno microcontroller and capacitive sensors, as well as programming for data processing. Testing was conducted to analyze the characteristics of the sensor in response to capacitance changes that occur due to chicken spoilage. The results of the study show that there are significant capacitance changes in chicken that has begun to spoil, where the capacitance value increases with the length of storage time. Additionally, it was found that the thickness of the meat affects the capacitance value, where an increase in meat thickness leads to a decrease in capacitance value. The system designed in this study is not only effective in detecting spoilage but can also serve as a useful tool for the community to ensure food safety.
