    Abstract

    Penelitian ini bertujuan untuk meningkatkan keterampilan praktikum siswa serta mengukur peningkatan keterampilan praktikum siswa melalui penerapan metode Mise en Place pada mata pelajaran produk cake dan kue Indonesia di SMKN 15 Bandung. Penelitian ini melibatkan 35 siswa sebagai subjek dalam penelitian. Metode yang digunakan adalah Pra-Eksperimen dengan desain penelitian one group pre-test post-test design. Metode Mise en Place, yang melibatkan persiapan semua bahan dan peralatan sebelum memulai proses memasak, diterapkan pada satu kelas siswa kelas XI Kuliner 2. Hasil analisis data menggunakan uji-t berpasangan menunjukkan adanya peningkatan yang signifikan (p < 0,05) pada keterampilan praktikum siswa setelah penerapan metode ini. Nilai N-gain sebesar 0,8816 mengindikasikan peningkatan sebesar 88,2%. Temuan ini menunjukkan bahwa penerapan metode Mise en Place dapat meningkatkan keterampilan praktikum siswa.
    This study aims to improve students' practical skills and measure the improvement of students' practical skills through the application of the Mise en Place method in the subject of Indonesian cake and pastry products at SMKN 15 Bandung. This study involved 35 students as subjects in the study. The method used was Pre-Experiment with one group pre-test post-test design. The Mise en Place method, which involves preparing all ingredients and equipment before starting the cooking process, was applied to one class of XI Culinary 2 students. The results of data analysis using paired t-test showed a significant increase (p < 0.05) in students' practical skills after the application of this method. The N-gain value of 0.8816 indicated an increase of 88.2%. This finding indicates that the application of the Mise en Place method can improve students' practical skills.
