Abstract

ABSTRAK Latar belakang penelitian ini yaitu job sheet table set up yang ada belum lengkap dan belum mengacu pada standar operasional prosedur industri atau hotel, sehingga kegiatan kurang tearah yang berakibat peserta didik tidak maksimal dalam melakukan praktik khususnya table set up. Penelitian bertujuan untuk mengembangkan job sheet table set up pada praktik food and beverage service berbasis standard operating procedure di SMK Akomodasi Perhotelan. Metode penelitian yang digunakan yaitu research and development (R&D) dengan model PPE yang dikembangkan oleh Richey and Klein. Instrumen penelitian yang digunakan untuk penelitian terdiri dari wawancara, studi dokumentasi, dan format validasi. Expert judgment dilakukan oleh dua ahli kurikulum dan pembelajaran serta tiga ahli materi Akomodasi Perhotelan dan Tata Hidang. Hasil expert judgment menunjukkan bahwa job sheet table set up pada praktik food and beverage service berbasis standard operating procedure di SMK Akomodasi Perhotelan termasuk kriteria sangat layak digunakan dengan nilai rata-rata 81.50%. ABSTRACK The background of this research is that the existing job sheet table set up is incomplete and has not referred to the operating standard of industrial or hotel procedures, so that the activity is less directional which results the learners are not maximum in conducting practice in particular table set up. Research aims to develop a job sheet table set up on the practice of food and beverage service based on standard operating procedure in vocational accommodation hospitality. The research method used is research and development (R&D) with PPE model developed by Richey and Klein. Research instruments used for research consist of interviews, documentation studies, and validation formats. Expert judgment is conducted by two curriculum and learning experts and three specialist of Hospitality Accommodation and F&B Service. The results of expert judgment showed that the job sheet table set up on the practice of food and beverage service based on standard operating procedure at SMK hospitality accommodation including very decent criteria is used with an average value of 81.50%.
