    Abstract

    Studi ini menganalisis perkembangan Asstro Highlands Ciater sebagai destinasi wisata kuliner berbasis permakultur, menanggapi penekanan global yang semakin meningkat terhadap keberlanjutan dalam industri pariwisata yang dinamis. Meskipun sejumlah studi telah mengeksplorasi pengembangan wisata gastronomi berbasis permakultur, sebagian besar belum menggali secara mendalam persepsi wisatawan terhadap destinasi tersebut, khususnya di Indonesia. Penelitian sebelumnya lebih menyoroti aspek manajerial, teknis, dan lingkungan tanpa mengedepankan pengalaman subjektif wisatawan sebagai indikator keberhasilan destinasi. Selain itu, belum ada kajian serupa yang secara khusus meneliti Asstro Highlands Ciater dengan karakteristik geografis dan sosial-budaya yang berbeda. Oleh karena itu, penelitian ini bertujuan untuk mengisi kesenjangan tersebut. Menggunakan metode studi kasus deskriptif kualitatif, penelitian ini melibatkan berbagai pemangku kepentingan, termasuk manajemen, pemerintah, pekerja, pemasok, ahli, pengamat, organisasi masyarakat, dan media, serta wisatawan sebagai responden. Data dikumpulkan melalui wawancara mendalam, pengamatan langsung, tinjauan dokumen, dan kuesioner. Temuan menunjukkan bahwa Asstro Highlands Ciater secara efektif menerapkan berbagai komponen pariwisata dan sembilan elemen gastronomi, yang menghasilkan persepsi positif yang tinggi dari wisatawan terkait kualitas makanan, suasana, dan nilai edukatif. Keterlibatan pemangku kepentingan Nona Helix, meskipun bervariasi dalam optimasi, secara signifikan mempengaruhi praktik operasional dan pengalaman pengunjung. Disimpulkan bahwa Asstro Highlands Ciater memiliki potensi besar untuk pengembangan pariwisata gastronomi berkelanjutan, yang memerlukan kolaborasi yang lebih baik di antara pemangku kepentingan dan program pendidikan yang terstruktur untuk sepenuhnya mewujudkan konsep permakulturnya yang unik. Kata kunci: Pariwisata gastronomi, Permakultur, Persepsi wisatawan, Nona Helix, Pariwisata berkelanjutan This study analyzes the development of Asstro Highlands Ciater as a permaculture- based gastronomic tourism attraction, addressing the growing global emphasis on sustainability within the dynamic tourism industry. While previous studies have explored the development of permaculture-based gastronomic tourism, most have not thoroughly examined tourists' perceptions of such destinations, particularly in the Indonesian context. Earlier research has mainly focused on managerial, technical, or environmental aspects without emphasizing the subjective tourist experience as a key indicator of destination success. Furthermore, there is a lack of research specifically analyzing Asstro Highlands Ciater, which possesses unique geographical and socio-cultural characteristics. This study seeks to fill that gap. Employing a qualitative descriptive case study, the research involved diverse stakeholders, including management, government, workers, suppliers, experts, observers, community organizations, and media, alongside tourists as respondents. Data were collected through in-depth interviews, direct observation, document review, and questionnaires.Findings reveal that Asstro Highlands Ciater effectively implements various tourism components and nine gastronomy elements, leading to highly positive tourist perceptions regarding food quality, ambiance, and educational value. The involvement of the Nona Helix stakeholders, though varying in optimization, significantly influences operational practices and visitor experience. It is concluded that Asstro Highlands Ciater possesses substantial potential for sustainable gastronomic tourism development, necessitating enhanced collaboration among stakeholders and structured educational programming to fully realize its unique permaculture concept.
