Abstract
Saat ini industri pariwisata tumbuh menjadi salah satu industri terbesar di dunia terutama wisata kuliner. Saat ini destinasi di seluruh Indonesia sedang mengembangkan identitas kuliner khas wilayahnya masing-masing, salah satunya Desa Bojongkunci, Kabupaten Bandung. Desa Bojongkunci terkenal dengan pengelolaan industri kudapan tradisional nya yang beragam. Tujuan dari penelitian ini adalah untuk (1) mengetahui pemetaan potensi gastronomi di Desa Bojongkunci, (2) mengetahui pengembangan produk wisata gastronomi di Desa Bojongkunci, (3) mengetahui pengembangan produk oleh-oleh di Desa Bojongkunci, hingga (4) penerapan creativepreneurship nona helix pada pengelolaan wisata gastronomi di Desa Bojongkunci. Desain penelitian yang digunakan adalah kualitatif dengan metode studi etnografi dengan pendekatan deskriptif kualitatif melalui pengumpulan data berupa wawancara, observasi, kuesioner, studi dokumentasi, dan studi literatur. Hasil dari penelitian ini adalah Desa Bojongkunci memiliki potensi wisata gastronomi berupa pengrajin kudapan tradisional dengan produk unggulan nya kolontong dan parered. Pengembangan produk kolontong dan parered ini belum memiliki perubahan dari segi cita rasa maupun variasi karena masih mempertahankan nilai kelokalan yang dimiliki. Pengembangan produk oleh-oleh pun masih sangat sederhana dari segi kemasan dan labeling. Maka dari itu dukungan dari pemangku kepentingan diperlukan dalam pengembangan produk wisata gastronomi ini agar produk kolontong dan parered ini dapat menarik wisatawan dan menjadikan kolontong dan parered ini sebagai salah satu destinasi wisata gastronomi di Kabupaten Bandung. Currently the tourism industry has grown to become one of the largest industries in the world, especially culinary tourism. Currently, destinations throughout Indonesia are developing culinary identities unique to their respective regions, one of which is Bojong Kunci Village, Bandung Regency. Bojong Kunci Village is famous for managing its various traditional snack industries. The aims of this study were (1) to determine the mapping of gastronomic potential in Bojong Kunci Village, (2) to determine the development of gastronomic tourism products in Bojong Kunci Village, (3) to determine the development of souvenir products in Bojong Kunci Village, to (4) the application of creativepreneurship nona helix in the management of gastronomic tourism in Bojong Kunci Village. The research design used was qualitative with an ethnographic study method with a qualitative descriptive approach through data collection in the form of interviews, observations, questionnaires, documentation studies, and literature studies. The results of this study are that Bojong Kunci Village has the potential for gastronomic tourism in the form of traditional snack craftsmen with their superior products being kolontong and parered. The development of this kolontong and parered product has not changed in terms of taste or variety because it still maintains its local value. The development of souvenir products is still very simple in terms of packaging and labeling. Therefore support from stakeholders is needed in the development of this gastronomic tourism product so that this Kolontong and Parered product can attract tourists and make Kolontong and Parered one of the gastronomic tourism destinations in Bandung Regency.
