Abstract

Tujuan penelitian ini adalah menganalisis elemen dan fenomena yang mempengaruhi perkembangan restoran di Kota Bandung, serta mengidentifikasi perkembangan dan faktor yang mempengaruhinya dalam perkembangan restoran di Kota Bandung dan menganalisis pola persebaranya melalui pola yang digambarkan dari adopsi teori Beach Resort Model. Metode yang digunakan adalah metode sejarah dengan pendekatan kualitatif. Kemudian, pengumpulan data menggunakan metode studi putaka dan pencarian internet. Adapun teknik analisis yang digunakan adalah teknik analisis isi (content analysist) dan adopsi dari teknik analisis pohon masalah untuk menidentifikasi faktor-faktor yang mempengaruhi perkembangan restoran. Kesimpulan ditarik bedasarkan temuan dari fakta yang dirangkum dalam elemen dan fenomena yang mempengaruhi, dari temuan tersebut dapat dinyatakan bahwa faktor-faktor yang mempengaruhi perkembangan restoran yaitu: perubahan sosial, teknologi, pariwisata, aksesibilitas, persaingan bisnis dan kebijakan pemerintah. Hasil mengenai pola persebaran yang digambarkan melalui peta dan pola persebaran menunjukan bahwa perkembangan restoran bergerak sporadis dari pusat kota menuju beberapa pusat hiburan dan bisnis di Utara pusat kota. Berdasarkan penelitian ini dihasilkan saran yang menyatakan bahwa tak banyak literatur yang membahas mengenai sejarah perkembangan pariwisata dengan restoran sebagai daya tariknya. Oleh karena itu, penting bagi akademisi untuk kembali meneliti pekembangan restoran dari sejarahnya hingga perkembangannya saat ini. Kemudian, pentignya perhatian terkait perencanaan pertumbuhan dan persebaran restoran agar potensi wisata kuliner di Bandung dapat di optimalkan dengan baik. The purpose of this study is to identify developments and factors that influence the development of restaurants in the city of Bandung. Then the development of the restaurant is described through the distribution pattern adopted from the Beach Resort Model theory. The method used is the historical method with a qualitative approach. Then, data collection using literature study and internet search methods. The analytical techniques used are content analysis techniques and the adoption of problem tree analysis techniques to identify factors that influence the development of restaurants. Conclusions are drawn based on the findings from the facts summarized in the elements and influencing phenomena, from these findings it can be stated that the factors that influence the development of restaurants are: social change, technology, tourism, accessibility, business competition, and government policies. The results of the distribution pattern depicted through the map and the distribution pattern show that the development of restaurants moves sporadically from the city center to entertainment places and business centers in the north of the city center. Based on the research that resulted, it was suggested that there is not much literature that discusses the history of tourism development with restaurants as the main attraction. Therefore, academics need to re-examine the development of restaurants from their history to their current development. Then, the importance of attention related to planning the growth and distribution of restaurants so that the potential for culinary tourism in Bandung can be optimized properly
