Abstract

Penelitian ini bertujuan untuk membuat dan mengkarakterisasi pati terasetilasi berbahan dasar talas liar (Colocasia esculenta L. Schott). Penelitian dilakukan dalam beberapa tahap yaitu isolasi pati talas liar, proses asetilasi pati talas liar dan pengujian karakteristik pati talas liar. Pati terasetilasi dibuat dengan variasi konsentrasi asam asetat (5, 10, 15) % dan variasi waktu reaksi (30, 45, 60) menit. Karakteristik pati yang dilakukan meliputi uji swelling power, kelarutan, viskositas, sineresis dan analisis gugus fungsi dengan instrumen FTIR (Fourier Transform Infrared Spectroscopy). Dari hasil penelitian diperoleh bahwa pati talas liar terasetilasi memiliki nilai swelling power sebesar 2,7873 g/g dan nilai kelarutan sebesar 10,3997% yang lebih tinggi dibandingkan dengan pati talas liar native. Sedangkan nilai viskositas sebesar 22,82 x 10-3 Pa.s dan nilai sineresis sebesar 7,36% memiliki nilai yang lebih rendah. Analisis spektra pati talas terasetilasi menggunakan instrumentasi FTIR diperoleh serapan gugus fungsi C=O pada bilangan gelombang 1641,42 cm-1. The purpose of the research was to make and characterize of acetylated wild taro starch (Colocasia esculenta L. Schott). The research involved isolation of wild taro starch, acetylation process, and testing characteristics of wild taro starch. Starch acetate was made with concentrations of acetate (5, 10, 15)% and reaction time (30, 45, 60) minutes. The characteristic of starch was analyzed for swelling power, solubility, viscosity, syneresis and the functional group using the FTIR (Fourier Transform Infrared Spectroscopy) instrument. The results showed that acetylated wild taro starch had a swelling power value of 2.7873 g / g and a solubility value of 10.3997% higher than wild taro starch native. While the viscosity value is 22.82 x 10-3 Pa.s and the syneresis value of 7.36% has a lower value. The spectra analysis of acetylated wild taro starch with FTIR indicates C=O functional group absorption at wave number 1641,42 cm-1.
