Abstract
Abstrak: Home Industry merupakan perusahaan yang memiliki tempat usaha di tempat tinggal dengan peralatan pengolahan pangan manual hingga semi otomatis. Sejalan dengan meningkatnya home industry kini menjamah pada sektor pangan. Hal penting yang harus diperhatikan saat mengolah makanan yaitu personal higiene yang baik agar tidak terjadi kontaminasi silang dari food handler kedalam makanan. Penerapan personal higiene yang tinggi dapat menentukan hasil akhir dari makanan yang diolah apakah makanan tersebut aman untuk dikonsumsi, aman disini artinya bebas dari hal-hal yang dapat membahayakan, merugikan dan bebas dari kerusakan. Berdasarkan studi pendahuluan di desa Sindang Kabupaten Indramayu terdapat home industry kerupuk yang belum sepenuhnya menerapkan personal higiene dengan baik. Hal tersebut dilihat dari karyawan yang tidak menggunakan baju pada saat mengemas kerupuk yang sudah digoreng, tidak menggunakan sarung tangan pada saat pengemasan produk kerupuk. Peneliti ingin mengetahui bagaimana penerapan personal higiene pada home industry kerupuk secara keseluruhan. Tujuan umum dalam penelitian ini adalah untuk memperoleh informasi mengenai penerapan personal higiene karyawan home industry kerupuk di desa Sindang kecamatan Sindang kabupaten Indramayu. Metode penelitian yang digunakan ialah deskriptif kuantitatif. Teknik pengumpulan data yang digunakan yaitu kuesioner dengan metode observasi. Hasil penelitian menunjukan bahwa secara keseluruhan sikap personal higiene karyawan yang meliputi kebersihan rambut, hidung, mulut dan gigi, tangan dan jari tangan, badan, serta pakaian kerja pada penerapan personal higiene saat bekerja didapat rata – rata sebesar (86,2%) masuk dalam kategori sangat baik. Perilaku personal higiene karyawan saat bekerja masuk dalam kategori cukup diterapkan. Rekomendasi penelitian ini perlu ditingkatkan kembali mengenai penerapan personal higiene karyawan saat bekerja dan untuk pengelola home industry diharapkan dapat memberikan pelatihan dan penyuluhan mengenai personal higiene kepada karyawan agar penerapan personal higiene dapat diterapkan dengan baik. Kata Kunci: home industry kerupuk, personal higiene. Abstract: Home Industry is a company that has a place of business in residence with manual to semi-automatic food processing equipment. In line with the increasing home industry now touches on the food sector. The important thing to consider when processing food is good personal hygiene to avoid cross contamination from food handlers into food. The application of high personal hygiene can determine the end result of processed food whether the food is safe for consumption, safe here means free from things that can be harmful, harmful and free from damage. Based on preliminary studies in the village of Sindang, Indramayu Regency, there is a cracker home industry that has not fully implemented personal hygiene properly. This can be seen from employees who do not wear clothes when packing crackers that have been fried, do not use gloves when packing cracker products. Researchers want to know how the application of personal hygiene in the cracker home industry as a whole. The general objective in this study was to obtain information on the application of personal crackers home industry employee hygiene in Sindang village, Sindang sub-district, Indramayu district. The research method used is quantitative descriptive. Data collection techniques used were questionnaires with observation methods. The results showed that overall personal hygiene attitudes of employees which included cleanliness of hair, nose, mouth and teeth, hands and fingers, body, and work clothes on the application of personal hygiene at work were on average of (86.2%) included in very good category. Personal hygiene behavior of employees when working in the category is quite applied. The recommendations of this research need to be improved again regarding the application of employee personal hygiene at work and for the home industry manager is expected to provide training and counseling about personal hygiene to employees so that the application of personal hygiene can be applied properly.
