Abstract
Penelitian ini dilatar belakangi oleh diperlukannya keterampilan yang sangat baik dalam mengolah ikan dikarenakan kandungan yang terdapat pada tubuh ikan didominasi oleh air, protein, dan lemak yang menyebabkan ikan menjadi bahan pangan yang sangat mudah rusak. Mengingat bakteri mudah tumbuh dan berkembang di lingkungan yang lembab terutama pada bahan makanan yang banyak mengandung protein termasuk ikan. Tujuan dari penelitian ini adalah mengetahui keterampilan peserta pelatihan mobile training unit BLK Lembang pada kompetensi pengolahan ikan mulai dari persipan, pengolahan, hingga penyajian. Metode yang digunakan dalam penelitian ini yaitu metode deskriptif dengan pendekatan kuantitatif. Pengumpulan data dilakukan dengan teknik observasi. Hasil dari penelitian ini menunjukan keterampilan peserta dalam persiapan pengolahan ikan berada pada kategori tinggi, keterampilan dalam pengolahan ikan berada pada kategori sangat tinggi, dan keterampilan dalam penyajian abon berada pada kategori sangat tinggi. Berdasarkan hasil tersebut dapat disimpulkan bahwa peserta pelatihan mobile training unit BLK Lembang sudah menguasai keterampilan dalam pengolahan ikan. Rekomendasi ditujukan kepada pihak BLK Lembang agar dapat mengoptimalkan proses pelatihan mobile training unit. Bagi peneliti selanjutnya dapat meneruskan penelitian mengenai keterampilan peserta pada proses pembuatan produk olahan ikan lainnya. ..... This research is motivated by the need for excellent skills in processing fish because the content contained in the fish's body is dominated by water, protein, and fat which causes fish to become food that is easily damaged. Given that bacteria are organisms that are easy to grow and develop in humid environments, especially in foods that contain lots of protein including fish. The purpose of this study was to find out the skills of the mobile training participants of the BLK Lembang unit on fish processing competencies ranging from preparation, processing, to presentation. The method used in this study is descriptive method with a quantitative approach. The data collection is done by observation technique. The results of this study indicates that the skills of participants in the preparation of fish processing are in the high category, the skills in fish processing are in the very high category, and the presentation skills are in the very high category. Based on these results it can be concluded that the participants of the mobile training training at the Lembang BLK unit have mastered the skills in fish processing. The recommendations are addressed to the BLK Lembang in order to optimize the process of mobile training unit training. For researchers, they can continue the research on participants' skills in the process of making other processed fish products.
