Abstract
Pada dasarnya gastronomi sangat berkaitan erat dengan kuliner karena bisa menjadi penunjang dalam melestarikan kuliner khususnya minuman Tradisional yang ada di Jawa Barat. Pada saat ini keberadaan Minuman Tradisional Jawa Barat di Kota Bandung kurang begitu diminati maupun diperhatikan. Maka dari itu pelestarian Gastronomi menjadi salah satu alternatif dalam menjaga keberadaan minuman tradisional Jawa Barat Metode penelitian yang penulis gunakan dalam penelitian ini adalah metode kualitatif. Metode ini dilakukan dengan cara melakukan wawancara mendalam kepada beberapa pedagang minuman Tradisional Jawa Barat diantaranya Bandrek, Bajigur, Goyobod dan Cendol. Penulis juga mewawancarai seorang Ahli Gastronomi dan Budayawan Sunda untuk mengetahui upaya dan peran manfaat dalam melestarikan minuman tradisional Jawa Barat. Penulis pun mewawancarai pemerintah untuk mengetahui apa saja yang sudah dilakukan pemerintah Kota bandung dalam melestarikan minuman tradisional Jawa Barat. Dari hasil penelitian yang diperoleh, didapatkan beberapa Gambaran minuman Tradisional Jawa barat dari segi sejarah,tata cara menghidangkan maupun rasa lalu beberapa upaya dan peran manfaat dalam melestarikan minuman tradisional Jawa Barat serta bentuk apa saja yang sudah dilakukan pemerintah Kota Bandung dalam melestarikan Minuman Tradisional Jawa Barat. ;---Basically gastronomy are intimately associated with the culinary because it can be a support in preserving the traditional culinary especially beverages that exist in West Java. At this time the existence Beverage Tradisional West Java in Bandung and considered less desirable. Thus the preservation of gastronomy become one alternative to maintain the existence of the traditional beverage of West Java. The research method that I use in this study is a qualitative method. This method is done by in-depth interviews to some traders Traditional drinks such Bandrek West Java, Bajigur, Goyobod and Cendol. The author also interviewed an expert gastronomy and Cultural Sunda to know the efforts and role in preserving the benefits of the traditional beverage of West Java. The author also interviewed the government to find out what has been done by the government Bandung city in West Java preserving traditional drinks From the research results, obtained some overview drinks Java Traditional western in terms of history, the procedures for serving and flavor and some efforts and the role of benefits in preserving the traditional drink of West Java and form what has been done by the government of Bandung in preserving Beverage Traditional West Java.
