    Abstract

    PENGEMBANGAN VIDEO UNTUK INDUKSI PENERAPAN SANITASI DAN HIGIENE PADA PRODUKSI YOGHURT DI TEACHING FACTORY SMK NEGERI 1 PACET Resvika Putri Apriliani (2108828) Pendidikan Teknologi Agroindustri, Universitas Pendidikan Indonesia Jl. Dr. Setiabudi No. 229 Bandung, Indonesia resvikaapril@upi.edu ABSTRAK Sanitasi dan higiene merupakan faktor penting dalam pengolahan pangan, termasuk di Teaching Factory (Tefa) produksi yoghurt di SMK Negeri 1 Pacet. Namun, media pembelajaran yang tersedia masih terbatas sehingga siswa belum memperoleh gambaran nyata mengenai prosedur sanitasi dan higiene. Penelitian ini bertujuan untuk mengembangkan video sebagai media induksi untuk memperkenalkan langkah-langkah sanitasi dan higiene sebelum pelaksanaan produksi yoghurt di Tefa SMK Negeri 1 Pacet. Metode yang digunakan adalah Research & Development (R&D) dengan model ADDIE yang meliputi Analysis, Design, Development, Implementation, dan Evaluation. Selanjutnya, diterapkan video yang dikembangkan diterapkan melalui desain quasi experimental dengan dua kelompok, yaitu kelompok eksperimen yang menggunakan video sanitasi dan higiene dan kelompok kontrol yang menggunakan PowerPoint. Hasil validasi dari ahli materi, media, dan bahasa menunjukkan bahwa video tergolong sangat layak digunakan. Penerapan pada siswa menunjukkan bahwa kelompok eksperimen memiliki pemahaman kognitif dengan kategori sangat baik dan kemampuan psikomotorik dengan kategori sangat terampil, sementara kelompok kontrol memiliki pemahaman kognitif dengan kategori sedang dan kemampuan psikomotorik dengan kategori terampil. Oleh karena itu, video sanitasi dan higiene dapat digunakan sebagai media induksi untuk membantu siswa memahami dan menerapkan sanitasi dan higiene pada produksi yoghurt di Tefa SMK Negeri 1 Pacet. Dr. Setiabudi No. 229 Bandung, Indonesia resvikaapril@upi.edu ABSTRACT Sanitation and hygiene are important factors in food processing, including at the Teaching Factory (Tefa) yogurt production facility at SMK Negeri 1 Pacet. However, the available learning media are still limited, so students have not yet gained a clear understanding of sanitation and hygiene procedures. This study aims to develop a video as an induction medium to introduce sanitation and hygiene steps prior to yogurt production at the Tefa SMK Negeri 1 Pacet. The method used is Research & Development (R&D) with the ADDIE model, which includes Analysis, Design, Development, Implementation, and Evaluation. The developed video was then applied through a quasi-experimental design with two groups: an experimental group using the sanitation and hygiene video and a control group using PowerPoint. Validation results from subject matter experts, media experts, and language experts indicate that the video is highly suitable for use. The application on students showed that the experimental group had cognitive understanding in the very good category and psychomotor skills in the very skilled category, while the control group had cognitive understanding in the moderate category and psychomotor skills in the skilled category. Therefore, the sanitation and hygiene video can be used as an instructional medium to help students understand and apply sanitation and hygiene in yogurt production at Tefa SMK Negeri 1 Pacet.
