    Abstract

The engineering skills of high school students in Indonesia are still low, thus hindering innovation in handling the problem of fruit waste. In addition, student involvement in responsible consumption and production actions is also low. This condition is due to the lack of implementation of project learning in schools. A workable solution is the integration of the use of food dehydrators in STEM-ESD projects to extend the shelf life of fruits while developing engineering skills and students' actions towards sustainability. This study aims to get a comprehensive picture of students' engineering skills and actions after learning the STEM-ESD Responsible Consumption and Production project. The method used is pre-experimental design with convenience sampling technique. The research was conducted at SMAN Bandung Regency, involving 69 students in class X. Data were obtained from the analysis of LKPD answers which assessed four phases: problems, solutions, implementation, and process management with 22 assessment indicators on a scale of 4, as well as student action questionnaires (Likert 1-4). The research findings showed an average of 80% of students' engineering skills (good). The process management phase received the highest score (92%), while the solution phase obtained the lowest score (69%). Student action also increased with a low N-Gain score (0.19) indicating the need for more attention in driving their engagement. The project's learning has the potential to be applied to support the value of sustainability and handling environmental issues, but long-term implementation is needed for students' engineering and action skills to develop optimally.
