Abstract
Latar Belakang: Santri merupakan kelompok yang bergantung pada penyelenggaraan makan di lingkungan tertutup pondok pesantren. Ketidakseimbangan antara asupan gizi dan kepuasan terhadap makanan yang disediakan dapat memengaruhi status gizi mereka. Tujuan: Penelitian ini bertujuan untuk mengetahui hubungan antara asupan energi, zat gizi makro (protein, lemak, dan karbohidrat), serta kepuasan terhadap penyelenggaraan makan dengan status gizi santri. Metode: Penelitian ini menggunakan desain cross-sectional dengan pendekatan kuantitatif dan melibatkan 60 responden yang dipilih secara total sampling. Data dikumpulkan melalui food recall 2×24 jam dan kuesioner kepuasan, kemudian dianalisis menggunakan uji Chi-Square. Hasil: Hasil penelitian menunjukkan bahwa terdapat hubungan yang signifikan (p-value < 0,05) antara asupan protein dan lemak dengan status gizi. Sementara itu, tidak ditemukan hubungan yang signifikan (p-value > 0,05) antara asupan energi, karbohidrat, dan kepuasan penyelenggaraan makan dengan status gizi. Simpulan: Asupan protein dan lemak memiliki hubungan yang signifikan dengan status gizi santri, sedangkan energi, karbohidrat, dan kepuasan terhadap penyelenggaraan makan tidak menunjukkan hubungan yang signifikan. Background: Santri are a group that depends on meal provision within the closed environment of Islamic boarding schools. An imbalance between nutrient intake and satisfaction with the meals provided can affect their nutritional status. Objective: This study aims to examine the relationship between energy intake, macronutrient intake (protein, fat, and carbohydrates), and satisfaction with meal provision and the nutritional status of santri. Methods: This study employed a cross-sectional design with a quantitative approach involving 60 respondents selected through total sampling. Data were collected using 2×24-hour food recall and a satisfaction questionnaire, then analyzed using the Chi-Square test. Results: The results showed a significant relationship (p-value < 0.05) between protein and fat intake and nutritional status. However, no significant relationship (p-value > 0.05) was found between energy intake, carbohydrate intake, and satisfaction with meal provision and nutritional status. Conclusion: Protein and fat intake are significantly associated with the nutritional status of santri, while energy, carbohydrate intake, and satisfaction with meal provision do not show a significant relationship.
