Abstract

Penelitian ini bertujuan untuk mengetahui konsentrasi yang terbaik dari cimpa ubi ungu, sehingga produk inovasi inidapat disukai panelis dan dapat diterima konsumen.Kandungan gizi Cimpa Ubi Ungu yang dianalisis melalui analisis gizi bahan baku berdasarkan DKBM (Daftar Komposisi Bahan Makanan) menunjukan : Cimpa Ubi Ungu per sajian atau sama dengan 25gr memiliki energi sebanyak 52,65 kkal, lemak sebanyak 0,18 gr, protein sebanyak 0,78 gr, karbohidrat sebanyak 13.01 gr , kadar mineral sebanyak 0,26 mg dan betakaroten sebanyak 825µg.Kelebihan dari Cimpa Ubi Ungu ini dengan menambahkan ubi ungu sebagai pewarna alami dan ubi ungu mengandung antioksidan yang sangat tinggi. Untuk penilaian investasi dikategorikan usaha layak untuk dijalankan karena NPV> 0 sebesar Rp.89.048.075, Net B/C > 1 sebesar 1,50, BEP unitsebanyak 30.071, BEP dalam rupiah adalah Rp. 180.333.818. This research aims to know the best concentration of cimpa sweet purple , so that the product of this innovation can be liked the panelists and accepted by the consumens. The nutrition content of cimpa sweet purple have been analyzed through nutrition raw material based on the list of food composition shows that : cimpa sweet purple per cereal offering or equal to 25gr, having energy as many as 52,65 kcal , 0.18 gr fat, 0,78 gr protein,13.01gr carbohydrates, 0.26 mg mineral and 825 mgr of betacarotene. The excess of this cimpa sweet purple by adding sweet purple as natural dye and sweet purple content of very high antioxidant. So , for investment appraisal business is categorial feasible because the NPV>0 of Rp.89.048.075 , Net b/c >1 of 1.50 , BEP Unit is 30.071 or 67.036.916 in rupiah.
