Abstract

Permasalahan yang dikaji dalam penelitian ini adalah penerapan Pre-Requisite Program dan implementasi HACCP yang masih belum berjalan secara maksimal di Aston Braga Hotel & Residence Bandung. Penelitian ini bertujuan untuk mengetahui bagaimana pengaruh penerapan Pre-Requisite Program dan implementasi HACCP terhadap jaminan keamanan makanan di ABHR Bandung. Metode penelitian yang digunakan dalam penelitian ini adalah metode deskriptif dan verifikatif, teknik penarikan sampel yang digunakan adalah teknik sampling jenuh, yaitu menggunakan semua anggota populasi pekerja dibagian Food & Beverage Product dan Steward sebanyak 37 responden. Teknik analisis data yang digunakan dalam penelitian ini yaitu regresi linier ganda. Hasil Penelitian ini menunjukan bahwa penerapan Pre-Requisite Program dan implementasi HACCP berpengaruh positif terhadap jaminan keamanan makanan sebesar 89,8%, sedangkan sisanya dipengaruhi oleh faktor-faktor lain yang tidak diteliti. Penerapan Pre-Requisite Program dan implementasi HACCP adalah sebuah sistem manajemen keamanan makanan yang harus diterapkan dan dilaksanakan di kitchen Aston Braga Hotel & Residence Bandung dan dipantau oleh badan berwenang atau tim audit melalui penyediaan alat bantu dan sasaran pemantauan agar upaya perlindungan jaminan keamanan makanan berjalan efektif. Untuk itu perlu diberikan pelatihan kepada seluruh pekerja di bagian Food & Beverage Product, Steward, Purchasing, Receiving, Storing dan seluruh anggota tim HACCP yang dibentuk. The issues that examined in this research are application of Pre-Requisite Program and HACCP implementation that still not running optimally at Aston Braga Hotel & Residence Bandung. The research has a purpose to identify how the influence of PRP application and HACCP implementation toward food safety assurance at ABHR Bandung. The research methods applied in this research is descriptive method and verification, sample are choosen using saturate sampling that use all population members in Food & Beverage Product and Steward section as much as 37 respondent. Data analysis technique in this research is multiple linear regressions. The result of this research proves that Pre-Requisite Program application and HACCP implementation has a positive influence toward food safety assurance amounted 89,8% while the rest are influenced by the other factors which are not investigated by the author. The Pre-Requisite Program application and HACCP implementation are food safety management system that have to be applied at Aston Braga Hotel & Residence kitchen and monitored by competent authorities or audit team through the provision of tools and monitoring targets in order to safeguard food safety assurance is effectively. Therefore, training to all workers in section of F&B Product, Steward, Purchasing, Receiving, Storing and all members of HACCP team are needed to be given.
