Namun, tantangan seperti fluktuasi harga bahan baku, manajemen limbah, dan keterbatasan teknologi menghambat keberlanjutan jangka panjang. Penelitian ini bertujuan mengkaji model manajemen rantai pasok berkelanjutan pada industri tahu skala kecil di Cibogo, Bandung. Penelitian diawali dengan analisis struktur rantai pasok yang mencakup pengadaan bahan baku, proses produksi, pemanfaatan limbah, dan distribusi. Struktur rantai pasok yang sederhana namun terintegrasi menunjukkan efisiensi tinggi, meskipun rentan terhadap gangguan eksternal. Selanjutnya, analisis keberlanjutan dilakukan menggunakan pendekatan lima dimensi (ekonomi, sosial, lingkungan, teknologi, dan sumber daya) berdasarkan model Purnomo (2011), dengan metode Multidimensional Scaling (MDS) melalui software RAPFISH. Hasil penelitian menunjukkan tingkat keberlanjutan industri tahu berada dalam kategori cukup berkelanjutan dengan nilai indeks 62,66. Dimensi ekonomi menjadi indikator paling sensitif, khususnya pada aspek stabilitas pendapatan. Fluktuasi pendapatan akibat perubahan permintaan dan harga bahan baku berdampak langsung pada kesejahteraan pekerja dan kelangsungan usaha. Strategi adaptif seperti penyesuaian harga, pengurangan ukuran produk, serta usulan sistem pengupahan berbasis rata-rata produksi bulanan dinilai relevan untuk memperkuat daya tahan usaha. Penelitian ini memberikan kontribusi dalam pengembangan strategi keberlanjutan UMKM berbasis pangan tradisional melalui pendekatan rantai pasok dan pengelolaan fluktuasi pasar. The tofu industry plays a significant role in providing plant-based food and supporting the local economy. However, challenges such as fluctuations in raw material prices, waste management, and limited technology hinder its long-term sustainability. This study aims to examine a sustainable supply chain management model for a small-scale tofu industry in Cibogo, Bandung. The research begins with an analysis of the supply chain structure, including raw material procurement, production processes, by-product utilization, and distribution. The supply chain, though simple, is well-integrated and shows high efficiency, but remains vulnerable to external disruptions. Furthermore, sustainability is assessed using a five-dimensional framework (economic, social, environmental, technological, and resource) based on Purnomo’s model (2011), applying the Multidimensional Scaling method through the RAPFISH software. The results indicate that the sustainability level of the tofu industry falls into the moderately sustainable category, with an index score of 62.66. The economic dimension is the most sensitive, particularly in the aspect of income stability. Income fluctuations due to changes in demand and raw material prices directly affect workers’ welfare and business continuity. Adaptive strategies such as price adjustments, product downsizing, and implementing a wage system based on average monthly production are considered relevant to strengthen business resilience.
