Penelitian ini menggunakan metode kuantitatif dengan pendekatan kausalitas dan regresi linier sederhana untuk mengukur hubungan antara variabel independen, yaitu TQM yang mencakup dimensi employee involvment, customer satisfaction, continuous process improvement, benchmarking, dan quality by design, dengan variabel dependen, yaitu Sustainable Performance yang mencakup dimensi economic sustainability, social sustainability dan environtment sustainability. Data dikumpulkan melalui penyebaran kuesioner kepada 70 karyawan restoran, serta didukung oleh studi literatur, wawancara dan observasi langsung. Hasil penelitian menunjukkan bahwa gambaran TQM dan gambaran sustainable performance berada pada kategori tinggi dan terdapat pengaruh positif yang signifikan pada TQM yang diterapkan terhadap sustainable performance diharapkan di Restoran Tepian Rasa Seafood Cirebon. Dari lima indikator TQM, restoran perlu meningkatkan aspek partisipasi karyawan dalam pengambilan keputusan. Rendahnya partisipasi karyawan dapat menghambat terciptanya budaya kualitas yang menyeluruh, sehingga peran aktif karyawan dalam proses pengambilan keputusan operasional menjadi penting untuk mendorong keberlanjutan kinerja restoran. This study aims to identify the overview of Total Quality Management (TQM) and sustainable performance at Restoran Tepian Rasa Seafood Cirebon, as well as to analyze the effect of TQM implementation on sustainable performance at PT Mitra Boga Persada, using a case study of Restoran Tepian Rasa Seafood Cirebon. This research employs a quantitative method with a causal approach and simple linear regression to measure the relationship between the independent variable, TQM—which includes the dimensions of employee involvement, customer satisfaction, continuous process improvement, benchmarking, and quality by design—and the dependent variable, sustainable performance, which includes economic sustainability, social sustainability, and environmental sustainability. Data were collected through questionnaires distributed to 70 restaurant employees, supported by literature review, interviews, and direct observation. The results show that both TQM and sustainable performance fall into the high category, and there is a significant positive influence of TQM implementation on sustainable performance at Restoran Tepian Rasa Seafood Cirebon. Among the five TQM indicators, the restaurant needs to improve employee participation in decision- making.
