Abstract

Natural packaging that can be used is edible coating using chitosan crickets. This study aims to examine the characterization of chitosan crickets, the effect of drying rate on the moisture content of strawberries, acidity (pH), total plate count (TPC) and organoleptic effects on taste, colour, texture and aroma to determine the effect of coating on fruit shelf life. strawberry. The research method used was 6 treatments. The experiments in this study consisted of extracting crickets, making chitosan solutions and applying coatings for fruit. The experimental method was that the strawberries were dipped in a solution of chitosan crickets with a concentration of 0.5%, 1%, 1.5% and 2% for one hour, then dried at room temperature. Chitosan solution was made by dissolving chitosan in 1% acetic acid solution. Preparation of chitosan solution includes demineralization, deproteination and deacetylation. The chitosan obtained was made with concentrations of 0.5%, 1%, 1.5% and 2%. For this experiment, analysis of the degree of deacetylation, moisture content, pH, TPC and organoleptic analysis was carried out. The results of this study stated that the degree of deacetylation of the chitosan used for coating strawberries in this study was 87.7%. From the experimental results of coating strawberries using a chitosan solution, the optimum conditions and able to inhibit microbial growth so that it can survive within two days is a coating with a concentration of 2%. The water content obtained from this study ranged from 90-94% and the average pH value was 3.7-3.1. Panelists assessment of the organoleptic quality of the fruit showed that the coated fruit could maintain a fairly good quality of colour, scent, taste and texture of the fruit. Chitosan crickets can be used as a preservative for strawberries. Keywords: Chitosan crickets, coating, strawberries, shelf life.
