Abstract

Frukton (etil-2-metil-1,3-dioksolana-2-asetat), juga dikenal sebagai bahan perisa dengan aroma buah apel, banyak digunakan dalam industri wewangian, kosmetik, dan detergen. Frukton dapat disintesis melalui reaksi asetalisasi etil asetoasetat menggunakan katalis H2SO4. Namun, reaksi sintesis frukton menghasilkan produk samping, yaitu trietilen glikol diasetat. Terbentuknya produk samping disebabkan oleh hidrolisis etil asetoasetat. Penelitian ini bertujuan untuk mengetahui pengaruh air dalam reaksi terhadap jumlah frukton dan produk samping serta kondisi optimum untuk sintesis frukton. Frukton disintesis menggunakan metode refluks yang dilengkapi set alat dean-stark dari etil asetoasetat dan etilen glikol pada berbagai variasi kondisi suhu, perbandingan mol etil asetoasetat dan etilen glikol, jumlah katalis, dan waktu reaksi. Untuk mengetahui pengaruh air, frukton di sintesis menggunakan kondisi azeotrop dengan variasi volume sikloheksan. Produk reaksi dianalisis menggunakan GC (Gas Chromatography) dan GC-MS (Gas Chromatography-Mass Spectrometry). Hasil penelitian menunjukkan bahwa pengurangan jumlah air dalam sistem reaksi dapat meningkatkan hasil konversi sintesis frukton dan menurunkan jumlah produk samping. Kondisi optimum reaksi untuk sintesis frukton diperoleh pada suhu 80˚C dengan penambahan 35 mL sikloheksan, perbandingan etil asetoasetat dan etilen glikol 1:2, waktu reaksi 2 jam, dan katalis H2SO4 sebanyak 0,006 mol (6mol%) dengan frukton yang dihasilkan sebanyak 93,02%, sisa etil asetoasetat yang tidak bereaksi 3,90%, dan produk samping sebanyak 3,08%. Kata Kunci: Sintesis, Frukton, Reaksi asetalisasi, Azeotrop Fructone (ethyl-2-methyl-1,3-dioxolane-2-acetate), also known as an apple-like flavouring agent, widely used in the perfumery, cosmetics, and detergent industries. Fructone can be synthesized by the catalytic acetalization of ethyl acetoacetate in the presence of H2SO4. However, this reaction produces side products, including triethylene glycol diacetate. The formation of these by-products is thought to be due to the hydrolysis of ethyl acetoacetate. This study aims to determine the effect of water on the yield of fructone and by-products, and also find the optimum reaction conditions for the synthesis of fructone. Fructone was synthesized by refluxing which was equipped with a dean-stark kit ethyl acetoacetate with ethylene glycol under various conditions of temperature, different mol ratio of ethyl acetoacetate and ethylene glycol, catalyst dosage, and reaction time. To determine the effect of water, fructone was synthesized using the azeotropic condition with the various volume of cyclohexane. The reaction products were analyzed by GC (Gas Chromatography) and GC-MS (Gas Chromatography-Mass Spectrometry). It was found that reducing the amount of water in the reaction system could increase the yield conversion of fructone and decrease the by-products. The optimum reaction conditions for the synthesis of fructone were found to be at 80˚C with the addition of 35 mL of cyclohexane, the ratio of ethyl acetoacetate and ethylene glycol of 1:2, reaction time of 2 hours, and catalyst loading of 0.006 mol(6mol%) H2SO4, thus resulting fructone in 93.02%, unreacted ethyl acetoacetate of 3.90% and by-product of 3.08%.
