Abstract

Kota Bandung memiliki salah satu daya tarik wisata kuliner yang beragam, salah satunya adalah makanan tradisional colenak. Usaha colenak pada saat ini sudah jarang dilakoni, namun ada beberapa tempat usaha yang masih memproduksi dan memasarkan colenak khas Kota Bandung. Makanan tradisional ini cukup diminati oleh para wisatawan yang berkunjung ke Bandung. Kualitas dari colenak yang ditawarkan oleh para produsen berbeda-beda. Cara produksi dan kualitas colenak yang ditawarkan kepada konsumen berbeda-beda. Penelitian ini bertujuan untuk menganalisis kualitas produk colenak yang diminati konsumen. Metode pengumpulan data dilakukan dengan cara observasi, wawancara, studi literatur, dan pengujian panelis. Untuk mengolah data digunakan Microsoft Excel 2010.
Penelitian ini menggunakan metode Critical Path Method (CPM) pada lini rakit terhadap 3 usaha colenak di Kota Bandung yang menghasilkan perbedaan terdapat pada proses pembakaran tape yang tidak konsisten membuat kualitas berbeda. Sedangkan dari hasil pengujian hedonik terhadap panelis yang meliputi rasa, tekstur, penampilan, dan aroma pada C1 (Colenak Murdi Putra), C2 (Warung Colenak), dan C3 (Colenak Braling) terdapat beda nyata. Untuk parameter penampilan, aroma dan warna yang paling digemari adalah colenak dari Murdi Putra. Sedangkan untuk parameter rasa dan tekstur yang paling digemari adalah colenak dari Warung Colenak.

Bandung have one of many culinary tourism appeal. one of many is a traditional food colenak. Nowaday colenak productions are seldom made, however there is a few businesses that still producing and marketing colenak Bandung as their specialty. The different in production process caused the quality that offered by those colenak producers are also varied. The aim of this study is to analyze the quality of colenak that most demanded by consumers. The methods of data collection were observation, interviews, literature studies, and panelists testing. To process the data used Microsoft Excel 2010.
This study used Critical Path Method (CPM) on line assembly of 3 colenak in Bandung, found difference of inconsistent TAPE combustion process result differents quality. While the result of hedonic test panelists that include taste, texture, appearance, and aroma of C1 (Colenak Murdi Putra), C2 (Warung Colenak), and C3 (Colenak Braling) found significant difference. The parameters of appearance, aroma, and colours, colenak from Murdi Putra is the most likeable. But the parameters of texture and taste colenak from Warung Colenak is the most popular.
