Abstract

DKI Jakarta merupakan ibukota Negara Republik Indonesia. Sebagai ibukota, DKI Jakarta juga menjadi salah satu tujuan wisata baik domestik maupun mancanegara. Kebudayaan, alam, dan kuliner tidak lepas dari kegiatan wisata tersebut. Penelitian ini bertujuan untuk mengetahui bagaimana daya tarik dari makanan tradisional khas Betawi yaitu Sayur Besan sebagai salah satu warisan gastronomi masyarakat Betawi yang berada di DKI Jakarta. Dalam hal ini, proses penelitian ini dilakukan melalui identifikasi eksistensi, jejak sejarah, proses pembuatan, dan juga upaya yang sudah dilakukan dalam melestarikan kuliner tersebut. Metode penelitian ini adalah penelitian yang menggunakan pendekatan kualitatif atau penelitian deskriptif. Untuk mendapatkan data yang diperlukan maka penelitian ini dilakukan dengan wawancara mendalam, observasi, dan juga dokumentasi sehingga dilakukan tindakan lebih lanjut untuk mengelola data tersebut sebagai hasil penelitiannya. DKI Jakarta dan sekitarnya merupakan fokus dalam penelitian ini. Hasil dari penelitian ini menunjukan aspek-aspek gastronomi yang terdapat pada Sayur Besan sebagai wisata warisan gastronomi di DKI Jakarta, identifikasi peran para pemangku kepentingan pengembang wisata gastronomi Sayur Besan, aspek-aspek daya tarik dari Sayur Besan, serta model pengembangan Sayur Besan di DKI Jakarta yang menunjukan hasil untuk dikembangkan menjadi wisata warisan gastronomi. DKI Jakarta is the capital city of the Republic of Indonesia. As the capital city, DKI Jakarta is also a tourist destination, both domestic and foreign. Culture, nature, and culinary cannot be separated from these tourism activities. This study aims to find out how the appeal of traditional Betawi food, namely Sayur Besan, is one of the gastronomic heritages of the Betawi people in DKI Jakarta. In this case, the research process is carried out through identification of the existence, historical traces, manufacturing process, and also the efforts that have been made in preserving the culinary. This research method is a research that uses a qualitative approach or descriptive research. To obtain the necessary data, this research was carried out by in-depth interviews, observation, and also documentation so that further action was taken to manage the data as a result of the research. DKI Jakarta and its surroundings are the focus of this research. The results of this study show the gastronomic aspects contained in Sayur Besan as gastronomic heritage tourism in DKI Jakarta, identify the role of stakeholders in the development of Sayur Besan gastronomic tourism, aspects of the attractiveness of Sayur Besan, and the model for the development of Sayur Besan in DKI Jakarta. which shows results to be developed into gastronomic heritage tourism.
