Abstract
Penelitian skripsi ini membahas masalah bagaimana pendapat mahasiswa Prodi Pendidikan Tata Boga Angkatan 2009 tentang sanitasi higiene karyawan dapur di tempat praktik industri. Tujuan penelitian ini adalah untuk mengetahui gambaran mengenai pendapat mahasiswa Prodi Pendidikan Tata Boga tentang sanitasi higiene karyawan dapur di tempat praktik industri. Metode penelitian yang digunakan adalah metode deskriptif. Populasi dalam penelitian ini adalah Mahasiswa Prodi Pendidikan Tata Boga Angkatan 2009 yang telah lulus mata kuliah Praktik Industri yang berjumlah 49 orang. Sampel yang digunakan yaitu teknik Sampling Jenuh. Instrumen yang digunakan yaitu kuesioner (angket). Hasil penelitian menunjukkan bahwa setengahnya responden berpendapat karyawan dapur di tempat praktik industri telah melaksanakan sanitasi higiene makanan dan penjamah makanan. Lebih dari setengahnya responden berpendapat karyawan dapur di tempat praktik industri telah melaksanakan sanitasi higiene tempat pengolahan makanan. Kurang dari setengahnya responden berpendapat karyawan dapur di tempat praktik industri telah melaksanakan sanitasi higiene peralatan dapur. Saran dari hasil penelitian ini ditujukan pada mahasiswa, yaitu dapat memberikan masukkan kepada karyawan dapur mengenai bagaimana sebaiknya penerapan sanitasi higiene dalam ruang lingkup sanitasi higiene makanan, penjamah makanan, tempat pengolahan makanan, dan peralatan sesuai dengan pengetahuan yang dimiliki mahasiswa. Kata Kunci: Pendapat, Mahasiswa Prodi Pendidikan tata Boga, Sanitasi Higiene, Karyawan dapur, Praktik Industri Abstract This paper research discussed about how the opinion of culinary education program student of 2009 about the hygiene sanitation for cook helper in the industry practice. The research purpose was to know an overview about the opinion of culinary education program student about the hygiene sanitation for cook helper in the industry practice. The research method used was descriptive method. The population in this research was the culinary education program student who have passed industry practice subject which amounts to 49 students. The sample used was sampling jenuh or census. The instrument used was questionnaire. The research result show a half of the respondents gave opinion that cook helpers in the industry practice have gotten hygiene food and food handlers. More than half of the respondents opined that the cook helpers in the industry practice have gotten hygiene sanitation for the food cultivation. Less than half of the respondents opined that the cook helpers in industry practice have gotten sanitation for kitchen tools. The suggestion of this research is limited to the students that a the culinary education program student should give the cook helper a suggestion about how to apply the hygiene sanitation in the context of food sanitation, food handler, food cultivation, and kitchen tool suitable with the knowledge of the students.
