Abstract

Chiffon cupcake merupakan variasi bentuk dari chiffon cake, berukuran kecil berbentuk cup dengan menggunakan loyang cupcake, maka disebut chiffon cupcake. Modifikasi chiffon cupcake juga dilakukan dengan pemanfaatan buah lokal salah satunya adalah nangka. Nangka merupakan salah satu buah lokal yang memiliki keunikan rasa serta aroma yang khas, warna dari daging buah yang cerah, nilai gizi yang baik serta kandungan karbohidrat yang banyak memungkinkan nangka diolah menjadi tepung nangka sebagai substitusi tepung terigu. Modifikasi tersebut kemudian diaplikasikan pada chiffon cupcake sehingga menghasilkan produk baru. Penelitian ini bertujuan untuk mengetahui karakteristik dan daya terima jackfruit chiffon cupcake. Metode yang digunakan dalam penelitian ini adalah eksperimental dengan analisis deskriptif. Hasil dari penelitian ini menunjukkan bahwa karakteristik jackfruit chiffon cupcake adalah penampakan warna kuning pada remah berada pada kuning cerah dan penampakan warna coklat pada kerak menunjukkan coklat sedikit gelap. Karakteristik rasa manis lebih kuat terasa daripada asin, asam dan pahit yang tergolong lemah. Aroma telur dan tepung sedikit tercium, sementara aroma nangka berada pada kategori kuat. Tekstur remah dan kerak berada pada kategori lembut. Hasil uji hedonik jackfruit chiffon cupcake menunjukkan bahwa produk dengan kode CC150 (jackfruit chiffon cupcake dengan penambahan tepung nangka 50%) lebih disukai oleh responden dibandingkan dengan produk yang diberi kode CC170 (jackfruit chiffon cupcake dengan penambahan tepung nangka 70%). Chiffon cupcake is a variation of the shape of chiffon cake, small cup-shaped by using a cupcake baking sheet, then called chiffon cupcake. Modification of chiffon cupcake is also done by utilizing local fruit, one of which is jackfruit. Jackfruit is one of the local fruits that has a unique flavor and distinctive aroma, bright colors of fruit flesh, good nutritional value and a lot of carbohydrate content that allows jackfruit to be processed into jackfruit flour as a substitute for wheat flour. These modifications are then applied to chiffon cupcake to produce new products. This study aims to determine the characteristics and acceptability of Jackfruit Chiffon Cupcake. The method used in this study was experimental with descriptive analysis. The results of this study indicate that the characteristics of jackfruit chiffon cupcake are the yellow appearance of crumbs on bright yellow and the appearance of brown color on the crust shows a slightly darker brown. Sweetness characteristics are stronger than salty, sour and bitter which are classified as weak. The aroma of eggs and flour smells a little, while the aroma of jackfruit is in the strong category. The texture of crumbs and crust is in the soft category. The hedonic test results of jackfruit chiffon cupcake show that products with CC150 code (jackfruit chiffon cupcake with the addition of 50% jackfruit flour) are preferred by respondents compared to products coded CC170 (jackfruit chiffon cupcake with the addition of 70% jackfruit flour).
