Abstract

Pati merupakan polimer alami yang dapat diperbaharui, biodegradable, dan harganya relatif murah. Keberadaan pati sangat melimpah di alam, sehingga pati dianggap sebagai kandidat yang menjanjikan untuk pengembangan material yang berkelanjutan dan ramah lingkungan. Pati dapat diisolasi dari berbagai macam tumbuhan dengan berbagai macam metode. Karakteristik pati sangat tergantung dari sumber dan metode isolasi yang digunakan. Dalam penelitian ini telah dilakukan karakterisasi pati yang diisolasi dari limbah biji salak. Pati diisolasi dari biji salak menggunakan dua metode yang berbeda, yakni metode 1 (blend-perlakuan basa-bleaching) dan metode 2 (perlakuan basa-bleaching-alkohol). Pati yang diisolasi dengan menggunakan metode 1 dan metoda 2 berturut-turut disebut sampel 1 dan sampel 2. Karakteristik pati dari biji salak yang ditentukan pada penelitian ini meliputi jenis polimorfi kristal pati, indeks kristalinitas, morfologi granular, distribusi ukuran partikel, dan stabilitas termal. Hasil analisis difraksi sinar-X (XRD) menunjukkan bahwa jenis polimorfi sampel 1 dan sampel 2 berturut-turut adalah jenis kristalin A dan C. Indeks kristalinitas untuk sampel 1 dan 2 berturut-turut adalah 20,19% dan 24,23%. Hal ini menunjukkan bahwa sampel 2 lebih kristalin daripada sampel 1. Hasil analisis Scanning Electron Microscopy (SEM) diperoleh informasi bahwa morfologi sampel 1 terlihat lebih menggumpal daripada sampel 2. Diamater partikel rata-rata sampel 1 (77 μm) lebih besar daripada sampel 2 (66 μm). Hasil analisis termal (TGA) diketahui bahwa pati biji salak sampel 1 dan 2 mulai terdegradasi berturut-turut pada suhu 219 °C dan 236 °C. Hal ini menunjukkan bahwa sampel 2 memiliki kestabilan termal yang lebih baik daripada sampel 1. ;----Starch is a renewable, biodegradable, and relatively inexpensive natural polymer. The presence of starch is very abundant in nature, therefore starch is considered as promising candidate for the development of sustainable and environmentally friendly materials. Starch can be isolated from various types of plants various methods. The characteristics of starch depend on the source and method of isolation used. In this study the characterization, starch isolated from the waste of zalacca seeds was carried out. Starch was isolated from zalacca seeds using two different methods, namely method 1 (blend-base treatment-bleaching) and method 2 (base treatment-bleaching-alcohol). Starch was isolated using method 1 and method 2, respectively, called sample 1 and sample 2. Characteristics of starch from zalacca seeds determined in this study included the type of starch crystal polymorph, crystallinity index, granular morphology, particle size distribution, and thermal stability. The results of X-ray diffraction analysis (XRD) showed that the type of polymorphs of sample 1 and sample 2 respectively were A and C type. The crystallinity index for samples 1 and 2 were 20,19% and 24,23%. respectively. This shows that sample 2 is more crystalline than sample 1. The results of the Scanning Electron Microscopy (SEM) analysis obtained information that the morphology of sample 1 appeared to be more lumpy than sample 2. The average particle size of sample 1 (77 μm) was greater than that of sample 2 (66 μm).
