    Abstract

    Penelitian ini bertujuan untuk mengetahui formulasi resep, daya
    terima konsumen terhadap produk, dan harga jual yang sesuai.
    Metode penelitian yang dilakukan yaitu ekperimental. Uji yang
    dilakukan dalam penelitian terdapat dua tahap, tahap pertama yaitu
    tahapan uji organoleptik kepada 15 panelis ahli, untuk menemukan
    formula terbaik dan uji daya terima konsumen kepada 100 panelis
    konsumen untuk menentukan daya terima konsumen.
    Hasil penelitian menunjukan bahwa formulasi terbaik yang
    dipilih oleh panelis ahli yaitu Selai Buah Naga dengan Citarasa Kayu
    Manis. Selanjutnya sampel terbaik digunakan pada tahap uji daya terima
    konsumen kepada 100 orang panelis konsumen. Berdasarkan hasil
    tersebut didapatkan skor sebesar 2086 untuk produk selai buah naga
    dengan rempah kayu manis ini. Skor tersebut berada pada kelas interval
    1701-2100, dimana skala tersebut menunjukan bahwa pada internal
    tersebut produk dapat diterima oleh konsumen, dan didapatkan harga
    jual produk Selai Buah Naga Bercitarasa Kayu Manis sebesar Rp
    11.965/pax hal tersebut berbanding lurus dengan harapan panelis
    konsumen yaitu Rp. 12.000.

    ;---This research aims to determine the recipe formulation,
    consumer’s acceptability, and the selling price that is suitable for this
    product.
    This research method is experimental research. There were two
    stages in this research, the first stage was organoleptic test to 15
    professional panelists, to to find out the best recipe formulation, and
    consumer acceptability test to 100 consumer panelists to decide the
    consumer acceptabilty toward the product.
    The result showed that the best recipe formulation is Dragon
    Fruit Jam with Cinnamon Flavor. The result is obtained from
    organoleptic test by professional panelists. Then the sample of product
    Dragon Fruit Jam with Cinnamon Flavor used in the second stages,
    assessment of consumer acceptability test. Based on the results score for
    Dragon Fruit Jam with Cinnamon Flavor is 2086, the score is in the
    interval class 1701-2100, where the scale shows that on the internal
    product can be accepted by consumers, and obtained the selling price of
    Dragon Fruit Jam with Cinnamon Flavor is Rp. 11.965/pax, it is
    suitable with consumer panelist’s expectation, Rp. 12.000.
