Abstract

Pada pendidikan teknologi dan kejuruan fasilitas pendukung berupa laboratorium, studio dan workshop diperlukan untuk menunjang kompetensi lulusannya. Penelitian ini dilakukan untuk melihat kondisi ruang praktik milik Program Studi Tata Boga di Universitas Pendidikan Indonesia. Salah satu kompetensi tenaga kependidikan yang harus dimiliki lulusan Pendidikan Tata Boga adalah mampu menggunakan teknik-teknik, keterampilan dan peralatan modern yang digunakan dalam bidang boga. Untuk mencapai kompetensi tersebut tentunya dibutuhkan kelengkapan sarana dan prasana dengan kondisi baik yang dapat menunjang pembelajaran praktik yang berada di Program Studi Tata Boga. Sarana dan prasarana tersebut adalah Laboratorium Katering dan diet, Laboratorium Patiseri, dan Laboratorium Tata Hidang. Penelitian ini menggunakan pendekatan kualitatif dengan metode penelitian deskriptif dan analisis. Teknik pengumpulan data adalah observasi, dokumentasi dan wawancara. Hasil penelitian menunjukan bahwa; 1) Keadaan eksisting ketiga laboratorium belum sesuai standar dilihat dari segi kapasitas ruang dalam satu kali rombongan belajar, Sarana dua laboratorium yang sudah sesuai standar yaitu laboratorium tata hiding dengan persentase 62,65% dan laboratorium patiseri dengan persentase 69,23%, sarana laboratorium Katering dan Diet belum tidak sesuai standar dengan persentase 45%. Ketiga laboratorium belum memenuhi standar prasarana ruang dalam laboratorium dengan persentase 40% untuk laboratorium Katering dan Diet, 33,33% untuk Laboratorium Patiseri, dan 40% untuk Laboratorium Tata Hidang; 2) Alur kegiatan dalam sirkulasi ruang Laboratorium Katering dan Diet sudah sesuai standar dengan persentase 61,53%, sirkulasi ruang laboratorium patiseri belum memenuhi standar dengan persentase 30,76%, serta kondisi laboratorium tata hidang yang tidak sesuai dengan standar. 3) Rekomendasi tata letak bagi Laboratorium Katering dan diet, Laboratorium Patiseri, dan Laboratorium Tata Hidang yang sesuai dengan standar dan tuntutan Kurikulum, serta merekomendasi penambahan ruang persiapan sebelum melakukan kegiatan praktikum.-- In technology and vocational education supporting facilities in the form of laboratories, studios and workshops are needed to support the competence of graduates. This research was conducted to look at the condition of the practice room owned by the Gastronomy Study Program at the Indonesian University of Education One of the competencies of the education staff that must be owned by graduates of the Gastronomy Study Program is to be able to use modern techniques, skills and equipment used in the food field. To achieve these competencies, of course, it is necessary to complete the facilities and infrastructure with good conditions that can support practical learning in the Gastronomy Study Program. These facilities and infrastructures are Catering and Diet Laboratories, Pastry Laboratories, and Table Setting Laboratory. This study uses a qualitative approach with descriptive and analytical research methods. Data collection techniques are observation, documentation and interviews. The results showed that; 1) The existing conditions of the three laboratories have not been in accordance with the standards in terms of space capacity in one study group, two standardized laboratory facilities, namely the Table Setting Laboratory with a percentage of 62.65% and a Pastry laboratory with a percentage of 69.23%, Catering and Diet Laboratory facilities is not in accordance with the standard with a percentage of 45%. The three laboratories have not fulfilled the space infrastructure standard in the laboratory with a percentage of 40% for Catering and Diet laboratories, 33.33% for Pastry Laboratories, and 40% for Table Setting Laboratory; 2) The work flow in the circulation of the Catering and Diet Laboratory space is in accordance with the standards of 61.53%, the circulation of Pastry Laboratoty has not met the standards with a percentage of 30.76%, and the conditions of Table Setting Laboratory that are not in accordance with the standards. 3) Layout recommendations for Catering and Diet Laboratory, Pastry Laboratories, and Table Setting Laboratory in accordance with standards and curriculum demands, as well as recommending additional preparation rooms before conducting practicum activities.
