Abstract

Kampung Adat Cireundeu merupakan salah satu kampong ada di Jawa Barat yang memiliki kebiasaan makan unik, yaitu makanan pokok yang berupa Rasi atau beras singkong yang sudah dilakukan sejak tahun 1920. Beras singkong merupakan ampas dari pengolahan singkong dalam pembuatan tepung aci. Pendamping Rasi merupakan kombinasi dari tumbuhan dan hewan pangan yang diolah sedemikian rupa sehingga dapat dikonsumsi. Penelitian ini bertujuan untuk mengidentifikasi pemanfaatan tumbuhan dan hewan pangan pendamping Rasi yang dikonsumsi oleh masyarakat adat Kampung Cireundeu. Penelitian dilakukan selama 9 Bulan sejak Oktober 2017 sampaiJuli 2018. Metode pengumpulan data dilakukan melalui observasi lapang dan wawancara langsung dengan 35 keluarga. Subjek penelitian adalah keluarga dengan makanan pokok Rasi di masyarakat adat kampong Cireundeu Desa Leuwigajah, Kecamatan Cimahi Selatan, Kota Cimahi, Provinsi Jawa Barat. Responden merupakan orang yang bertanggung jawab dalam mengolah makanan di rumah. Metod penelitian yang digunakan adalah deskriptif kualitatif dengan kategori etnografi, sedangk ananalisis yang digunakan adalahnilai pentingatau Relative Frequency of Citation (RFC) dan nilai guna atauUse Value Species (UVs). Hasil penelitian menunjukkan 108 species tumbuhan dan 24 species hewan digunakan sebagai pangan pendamping Rasi dengan kategori kegunaan makanan olahan, makanan pokok, minuman olahan, buah, sayur, lalap dan rempah serta bumbu. Pangan yang dominan dikonsumsi terdiri dari Rasi, tahu, ikan dan sayuran atau lalapan. Olahantahu dan olahan singkong merupakan pangan dengan nilai RFC tertinggi dengan nilai 1,00. Tumbuhan dan hewan yang digunakan sebagai pendamping Rasi diperoleh dengan berbagai cara, membeli merupakan cara peroleh yang paling sering dilakukan.;--Cireundeu traditional village is an indigenous village located in West Java. The distinctive feature of this traditional village is that its principal food is not rice like Indonesian people in general, they consume cassava (Manihotesculenta) as their staple food, referred as Rasi or BerasSingkong in Indonesia since 1920. Rasi was produced from the dregs of cassava, and it side food is a combination of plant and animal that can be processed and ate.This study aims to identify the ethnobiology of Rasi'sside food consumed by the Cireundeuindigenious people.The study was conducted for 9 Months from October 2017 to July 2018. Data collection methods were conducted through field observation and direct interviews with 35 households. Research subjects are families who eat Rasi as their staple food. Indigenous villages of Cireundeuwere located in Leuwigajah, South Cimahi District, Cimahi City, West Java Province. Respondents are people who responsible for processing food at home. The research method used is descriptive qualitative in the manner of ethnography, while the analysis used are Relative Frequency of Citation (RFC) and Use Value of Species (UVs). The results showed 108 species of plants and 24 species of animals were used as Rasi side food with usability categories were: processed foods, staple foods, processed drinks, fruits, vegetables,lalap(raw vegetables) and spices. The dominant food consumed by Cireundeu indigenous people consists of Rasi, tofu, fish and vegetables or lalap. Tofu and cassava have the highest RFC value with 1,00 respectively. Plants and animals used as a Rasi side food obtained in various ways, buying is the most frequently obtained way.
