Abstract

Berdasarkan data Survey Konsumsi Makanan Individu Indonesia (SKMI) 2014, tingkat kecukupan energi pada usia remaja menempati tempat terendah (defisit) dibandingkan golongan usia yang lain yaitu 73.8% AKE. Siswa SMK termasuk golongan usia remaja, siswa yang telah mendapatkan pengetahuan gizi diharapkan mampu mengaplikasikannya dalam kehidupan sehar-hari. Penelitian ini bertujuan untuk mengetahui pemenuhan kecukupan energi, protein, lemak, karbohidrat, vitamin dan mineral pada hidangan yang dikonsumsi siswa serta perilaku makan siswa di SMK Negeri 3 Cimahi. Metode penelitian mengunakan pendekatan metode deskriptif, dengan populasi siswa kelas X SMKN 3 Cimahi berjumlah 159 orang. Teknik penarikan sample dengan cara simple random sampling, sampel pada penelitian ini berjumlah 57 orang. Teknik pengumpulan data menggunakan recall 2 x 24 jam dan Food Frequency Questionnaire. Hasil penelitian menunjukan tingkat kecukupan yang termasuk pada kategori defisit tingkat sedang yaitu energi (71% dari AKG), defisit tingkat ringan yaitu protein (85% dari AKG). Tingkat kecukupan berdasarkan kategori kurang yaitu lemak (57.5% dari AKG), karbohidrat (75% dari AKG), kalsium (27% dari AKG), fosfor (25% dari AKG) dan vitamin C (35% dari AKG), kategori lebih yaitu zat besi (131% dari AKG) dan vitamin A (255% dari AKG). Hasil penelitian perilaku makan siswa, menunjukan bahwa frekuensi yang paling sering di konsumsi siswa yaitu; nasi 2 kali/hari, telur 1 kali/hari, tahu 1 kali/hari, bayam 2 kali/minggu, pisang 2 kali/hari, batagor 1 kali/hari dan teh manis 1 kali/hari. Saran bagi guru mata pelajaran Ilmu Gizi pada saat kegiatan belajar mengajar, agar lebih giat memotivasi siswa untuk memilih makanan yang sesuai dengan kebutuhan gizi dan dapat mengaplikasikan materi yang telah didapatkan dalam kehidupan sehari-hari.;---Based on the data of individual food consumption survey of Indonesia (SKMI) 2014, a level of sufficiency of energy at the lowest place occupied a teen age (deficit) than any other age group, 73.8% AKE. The SMK students including the age of the adolescents, students who have gained knowledge of nutrition are expected to be installed in the vernacular of the day life. This research aims to know the fulfillment of the adequacy of energy, protein, fat, carbohydrates, vitamins and minerals on dishes consumed students as well as eating behavior students in SMK Negeri 3 Cimahi. Research methods using descriptive method approach, with a student population of class X SMKN 3 Cimahi amounted to 159 people. Simple random sampling technique is used for taking any samples , the sample in this study amounted to 57 people. Data collection techniques using 2 x 24 recall hour and food frequency questionnaire. Results of the study showed the levels of adequacy that are included in the category of medium level of deficit, namely energy (71% of the RDA), mild level of deficit protein (85% of the RDA). The level of adequacy by categories less, fat (57.5% of the RDA), carbohydrates (75% of the RDA), calcium (27% of the RDA), phosphorus (25% of the RDA) and vitamin C (35% of the RDA), categories more of adequacy namely iron (131% of the RDA) and vitamin A (255% of the RDA). Eating behavior research students, showed that the frequency of the most frequent in consumption i.e. students ; rice 2 time/day, eggs 2 time/day, tofu 1 time/day, spinach 2 time/weeks, bananas 2 time/day, batagor 1 time/day and sweet tea 1 time/day. Recommendation for teachers subjects Nutrition upon teaching and learning activities, in order enterprising motivates students to choose food that is nutritional needs and can apply the material that has been obtained in everyday life.
