    Abstract

    Tujuan dari penelitian ini untuk membuat suatu inovasi produk dengan penambahan buah pepaya sebagai pemanfaatan sumber pangan lokal diolah menjadi sebuah produk penambahan pada makaroni schotel. Penelitian ini menggunakan metode kuantitatif verifikatif dengan studi eksperimen. Jumlah panelis ini sebanyak 15 orang panelis, diantaranya chef, dosen, pengusaha bakery dan pastry. Hasil dari penelitian yang diperoleh, makaroni schotel dengan penambahan buah pepaya yang mempunyai hasil pilihan terbaik dan dapat diterima oleh konsumen adalah makaroni schotel dengan penambahan buah pepaya matang.

    The purpose of this study to create a product innovation with the addition of papaya as the use of local food sources is processed into a product additions to the macaroni schotel . This study uses quantitative methods to the study of experimental verification . The number of panelists of 15 panelists , including chefs, teachers, bakers and pastry . The results of the research were obtained , macaroni schotel with the addition of papaya fruit which has the best selection and the results can be accepted by consumers is macaroni schotel with the addition of ripe papaya
