Abstract

Inovasi produk Layer Cake dengan penambahan tape ketan Kuningan merupakan salah satu upaya dalam mengembangkan variasi dari tape ketan Kuningan itu sendiri agar tape ketan tidak hanya dikonsumsi begitu-begitu saja. Mengingat Layer cake atau kue lapis merupakan jenis kue yang popular di Indonesia sehingga banyak yang menjadikan kue ini sebagai oleh-oleh. Penelitian ini bertujuan untuk mengetahui tingkat kesukaan dan daya terima konsumen.Metode penelitian yang digunakan adalah metode penelitian eksperimental. Dengan mengambil 15 orang sampel panelis ahli dibidang kuliner untuk menilai formulasi resep terbaik dari ketiga sampe produk. Setelah mendapatkan satu formulasi resep terbaik kemudian disebarkan kepada 100 orang panelis konsumen untuk mengetahui daya terima konsumen. Metode pengumpulan data dilakukan dengan menyebarkan kuesioner kepada panelis ahli dan panelis konsumen. Metode analisi data yang digunakan yaitu dengan menggunakan Microsof Excel 2010. Perlakuan pada penelitian ini adalah penambahan tape ketan Kuningan pada layer cake sebanyak 100 gr, 150 gr, dan 200 gr. Hasil penelitian yang diperoleh menunjukan bahwa formulasi resep yang terbaik ada pada penambahan tape ketan Kuningan 200 gr lebih banyak disukai karena aroma tape ketan lebih khas dan rasa dari tape ketan lebih terasa serta warna lebih menarik dibandingkan dengan formulasi resep penambahan tape ketan Kuningan 100 gr dan 150 gr. --- Product innovation in Layer Cake with the addition of tape ketan Kuningan is one of the efforts to develop a variety of tape ketan Kuningan itself so that the tape ketan not consumed only so-so. Remember Layer cake or a cake layer is a type of cake popular in Indonesia that many make this cake as a by-by. This research aims to know the level of joy and power thank consumers.research method used is experimental research method. By taking 15 samples panelists experts in the culinary to assess the best recipe formulation of the three product. After geting one formulation of the best recipes and then spread to 100 people panelist consumers to know receive power consumers. Data collection method is done with the spread of the questionnaire to the expert panellists and panelist consumers. A method of data that is used by using Microsof Excel 2010. The treatment in this research is adding tape ketan Kuningan on layer cake as much as 100 gr, 150 gr, and 200 gr. The research results obtained show that the formulation of the best recipe is on adding tape ketan Kuningan 200 gr more preferred for tape ketan more distinctive aroma and flavor of tape ketan more felt as well as the color of the more interesting than with the formulation of recipes adding tape ketan Kuningan 100 gr and 150 gr.
