Abstract
Penelitian yang berjudul Penerapan “Standar Kompetensi Menerapkan Sanitasi Di Lingkungan Perusahaan Pengolahan Hasil Pertanian” Pada Pelaksanaan Unit Produksi Roti di SMKN 1 Kuningan ini merupakan penelitian yang bertujuan untuk mengetahui penerapan sanitasi oleh responden yang merupakan siswa kelas XI tahun ajaran 2014 – 2015 THP SMKN 1 Kuningan. Penelitian deskriptif, pendekatan kualitatif dengan 27 orang subjek penelitian. Tujuannya untuk memperoleh gambaran bagaimana pengetahuan sanitasi diterapkan dalam memperlakukan bahan roti, peralatan pembuatan roti, ruang produksi, serta higiene pekerja dalam pembuatan roti. Teknik pengumpulan data yang digunakan adalah observasi dengan menggunakan lembar observasi berupa kriteria unjuk kerja siswa pada pembuatan roti, peneliti bertindak sebagai instrumen penelitian dengan alat lembar observasi KUK dan dokumen foto kegiatan. Kesimpulan penelitian menunjukkan bahwa (1) terdapat 100% responden ada pada penafsiran sanitasi sangat diterapkan oleh responden dalam memperlakukan persiapan bahan roti, ruang dan lingkungan pembuatan roti. (2) 71.54% responden ada pada penafsiran sanitasi diterapkan terhadap peralatan pembuatan roti, dan (3) terdapat 69.38% responden ada pada penafsiran sanitasi diterapkan terhadap higiene pekerja. This research which titled Implementing “Competency Standard Sanitary Implementation in Agricultural Product Company” on Bread Production Unit Performance in SMKN 1 Kuningan is a research that aims to know the implementation of sanitary by XI grade THP SMKN 1 Kuningan students. Descriptive study, qualitative approach with 27 study subjects. The aim is to gain an overview how sanitary knowledge implemented on handling raw materials, bread making equipments, production section, and workers hygiene on the bread making process. Data collection techniques that used is observation with observation sheet in the form of performance criteria for students in the making of bread, the researcher acted as an instrument with the KUK observation sheet and activities photo document. The research concluded that (1) 100% of respondents is in the interpretation that sanitation is applied by the respondents in treating the raw materials preparation of bread, bread making space and environment. (2) 71.54% respondents is in the interpretation that sanitation applied to bread making equipment, and (3) there is a 69.38% respondents in the interpretation that sanitation is applied to workers hygiene.
