    Abstract

    Kabupaten Majalengka memiliki berbagai pangan khas, salah satunya daun katel (pucuk daun kecambah kacang kedelai) yang pemanfaatannya masih terbatas. Penelitian ini bertujuan mengembangkan Jelly Daun Katel sebagai inovasi produk sekaligus variasi oleh-oleh dari Kabupaten Majalengka. Metode yang digunakan adalah eksperimen dengan pendekatan kuantitatif melalui kitchen project. Formula jelly dikembangkan dan diuji melalui uji organoleptik oleh 30 panelis semi terlatih untuk menentukan resep terbaik, dengan hasil menunjukkan bahwa formulasi JK-1 (kandungan daun katel rendah) memiliki tingkat penerimaan tertinggi. Uji daya terima konsumen melibatkan 100 panelis, dengan hasil menunjukkan bahwa produk ini sangat diterima. Strategi pemasaran dilakukan melalui media sosial untuk memperkenalkan produk, serta promosi dan penjualan langsung melalui toko oleh-oleh, event, lokasi wisata, dan word of mouth. Majalengka Regency has various typical foods, one of which is katel leaves (the tips of soybean sprout leaves) whose utilization is still limited. This research aims to develop Katel Leaf Jelly as a product innovation and a variation of souvenirs from Majalengka Regency. The method used is an experiment with a quantitative approach through a kitchen project. The jelly formula was developed and tested through organoleptic tests by 30 semi-trained panelists to determine the best recipe, with results showing that formulation JK-1 (low katel leaf content) had the highest acceptance level. The consumer acceptance test involved 100 panelists, with results indicating that the product was very well received. The marketing strategy was done through social media to introduce the product, as well as direct promotion and sales through souvenir shops, events, tourist locations, and word of mouth.
