    Abstract

    Penelitian ini bertujuan untuk mengembangkan dan menerapkan Standar Operasional Prosedur (SOP) pembuatan bomboloni berbasis Standar Kompetensi Kerja Nasional Indonesia (SKKNI) pada kegiatan Teaching Factory (Tefa) di SMKN 2 Cilaku. Latar belakang penelitian ini didasarkan pada belum optimalnya pelaksanaan praktik pembuatan bomboloni karena belum tersedianya SOP yang baku dan sesuai standar industri. Metode yang digunakan adalah Research and Development (R&D) dengan model ADDIE (Analyze, Design, Develop, Implement, Evaluate). Subjek penelitian terdiri dari peserta didik kelas XI APHP SMKN 2 Cilaku. Instrumen yang digunakan meliputi lembar validasi ahli, angket respon peserta didik, lembar observasi keterlaksanaan praktik, dan uji organoleptik produk. Hasil penelitian menunjukkan bahwa SOP yang dikembangkan dinilai sangat layak oleh ahli materi, ahli bahasa, dan ahli teaching factory. Penerapan SOP menunjukkan bahwa peserta didik dapat melaksanakan proses produksi bomboloni secara sistematis, dengan tingkat keterlaksanaan praktik dalam kategori sangat baik, dan mutu produk bomboloni memenuhi parameter mutu yang ditetapkan sekolah. Penelitian ini menyimpulkan bahwa SOP berbasis SKKNI efektif dalam meningkatkan hasil produksi di teaching factory. This study aims to develop and implement Standard Operating Procedures (SOP) for making bomboloni based on the Indonesian National Work Competency Standards (SKKNI) in the Teaching Factory (Tefa) activities at SMKN 2 Cilaku. The background of this study is based on the less than optimal implementation of bomboloni making practices due to the unavailability of standard SOPs that comply with industry standards. The method used is Research and Development (R&D) with the ADDIE (Analyze, Design, Develop, Implement, Evaluate) model. The subjects of the study consisted of class XI APHP SMKN 2 Cilaku students. The instruments used included expert validation sheets, student response questionnaires, observation sheets for the implementation of practices, and organoleptic tests of products. The results of the study showed that the developed SOP was considered very feasible by material experts, language experts, and teaching factory experts. The application of the SOP showed that students could carry out the bomboloni production process systematically, with the level of implementation of practices in the very good category, and the quality of the bomboloni products met the quality parameters set by the school. This study concludes that SOP based on SKKNI is effective in improving the quality production results in teaching factories.
