    Abstract

    Penelitian ini bertujuan untuk menganalisis penerapan Value Chain Analysis (VCA) dalam meningkatkan daya saing lulusan Program Studi D3 Seni Pengolahan Patiseri Politeknik Pariwisata NHI Bandung. Penelitian ini dilatarbelakangi oleh tuntutan industri pastry dan bakery yang terus berkembang, serta perlunya institusi vokasi dalam mencetak lulusan yang adaptif dan kompeten. Penelitian ini menggunakan pendekatan kualitatif dengan metode deskriptif. Teknik pengumpulan data dilakukan melalui wawancara mendalam, observasi langsung, dan studi dokumentasi, yang kemudian dianalisis menggunakan perangkat lunak NVivo. Hasil penelitian menunjukkan bahwa aktivitas utama meliputi input, operasi, output, pemasaran, dan pelayanan, sedangkan aktivitas pendukung terdiri dari pengelolaan sumber daya manusia, teknologi, infrastruktur, dan pengadaan. Dari analisis tersebut ditemukan bahwa kekuatan program studi terletak pada kurikulum berbasis industri, proporsi praktik tinggi, dan kerja sama dengan mitra industri. Namun, terdapat kelemahan pada aspek fasilitas, pelatihan SDM, dan pemanfaatan teknologi pembelajaran. Kesimpulan dari penelitian ini adalah bahwa Value Chain Analysis dapat digunakan sebagai alat strategis untuk mengevaluasi dan memperbaiki aktivitas internal program studi dalam rangka meningkatkan daya saing lulusan yang sesuai dengan kebutuhan industri. This research aims to analyze the application of Value Chain Analysis (VCA) in enhancing the graduate competitiveness of the D3 Pastry Arts Program at NHI Bandung Tourism Polytechnic. The study is motivated by the growing demand in the pastry and bakery industry and the need for vocational institutions to produce competent and adaptive graduates. This research uses a qualitative approach with a descriptive method. Data were collected through in-depth interviews, direct observations, and document analysis, then processed using NVivo software. The findings reveal that the primary activities consist of input, operations, output, marketing, and services, while the supporting activities include human resource management, technology development, infrastructure, and procurement. The study identifies strengths in industry-aligned curriculum, high proportion of practical learning, and partnerships with industry stakeholders. However, weaknesses are found in facilities, human resource development, and the use of educational technology. The study concludes that Value Chain Analysis serves as a strategic tool to evaluate and improve the program's internal activities to enhance graduate competitiveness in accordance with industry needs.
