Abstract
Soto Banjar merupakan ikon makanan tradisional khas Kalimantan Selatan yang memiliki potensi untuk dikenal lebih luas oleh masyarakat di luar daerah asalnya. Namun, di Kota Jakarta Pusat, popularitas dan pandangan wisatawan terhadap Soto Banjar masih belum dapat mengalahkan makanan tradisional dari daerah lain. Penelitian ini bertujuan untuk menganalisis persepsi wisatawan terhadap Soto Banjar di Kota Jakarta Pusat serta peran penta helix dalam memperkenalkan kuliner Soto Banjar. Selain itu, penelitian ini juga menganalisis potensi daya tarik wisata kuliner Soto Banjar khas Kalimantan Selatan di Kota Jakarta Pusat. Metode yang digunakan dalam penelitian ini adalah metode kualitatif deskriptif dengan pengumpulan data melalui wawancara mendalam, observasi, dan penyebaran kuesioner kepada wisatawan dan unsur penta helix. Hasil penelitian menunjukkan bahwa persepsi wisatawan terhadap Soto Banjar cenderung positif, dengan penilaian yang baik terhadap harga, kualitas, dan keunikan rasa. Meskipun demikian, masih terdapat tantangan dalam hal promosi dan pengenalan Soto Banjar sebagai daya tarik wisata kuliner Kalimantan Selatan di Jakarta Pusat, serta perlunya strategi yang lebih efektif untuk meningkatkan visibilitas kuliner ini. Soto Banjar is an iconic traditional dish from South Kalimantan that has the potential to be recognized more widely by people outside its region. However, in Central Jakarta, the popularity and perception of tourists towards Soto Banjar have not yet surpassed that of traditional foods from other regions. This study aims to analyze tourists' perceptions of Soto Banjar in Central Jakarta and the role of the penta helix in introducing Soto Banjar cuisine. Additionally, this research also analyzes the potential of Soto Banjar as a culinary tourism attraction from South Kalimantan in Central Jakarta. The method used in this study is descriptive qualitative, with data collection conducted through in-depth interviews, observations, and the distribution of questionnaires to tourists and elements of the penta helix. The results indicate that tourists' perceptions of Soto Banjar tend to be positive, with good assessments of its price, quality, and unique taste. However, there are still challenges in promoting and introducing Soto Banjar as a culinary tourism attraction from South Kalimantan in Central Jakarta, as well as the need for more effective strategies to enhance the visibility of this cuisine.
