    Abstract

    Latar Belakang: Penerapan sistem penyelenggaraan makanan yang layak, sanitasi lingkungan, dan pemenuhan kebutuhan gizi pada narapidana yang tidak sesuai standar pada lapas yang mengalami overcapacity menjadi penyebab masalah status gizi. Tujuan: Penelitian ini bertujuan untuk menganalisis hubungan kepuasan penyelenggaraan makanan, lingkungan lapas, dan asupan zat gizi makro dengan status gizi narapidana overcapacity. Metode: Penelitian ini menggunakan metode kuantitatif dengan pendekatan desain penelitian cross sectional. Jumlah responden penelitian ini sebanyak 81 narapidana yang dipilih secara purposive sampling di Lapas Kelas IIB Kabupaten Sumedang. Pengumpulan data menggunakan instrumen kuesioner, pengukuran tinggi badan dan berat badan, dan wawancara recall makanan 2x24 jam. Hasil: temuan data menunjukkan bahwa lebih dari setengah (53,1%) responden tidak puas dengan penyelenggaraan makanan di Lapas. Selain itu, sebanyak (50,6%) responden merasa tidak nyaman dengan lingkungan Lapas. Lebih dari setengah responden juga mengalami defisit asupan gizi, yaitu energi (63%), protein (86,4%), dan karbohidrat (85,2%). Sementara itu, (72,8%) responden memiliki asupan lemak cukup. Berdasarkan hasil uji chi-square, terdapat hubungan yang signifikan antara lingkungan Lapas (p-value = 0,000) dan asupan energi (p-value = 0,028) dengan status gizi responden. Sementara itu, tidak ditemukan hubungan yang signifikan antara kepuasan terhadap penyelenggaraan makanan (p-value = 0,445), asupan protein (p-value = 0,381), asupan lemak (p-value = 0,053), serta asupan karbohidrat (p-value = 0,192) dengan status gizi responden. Kesimpulan: Dengan demikian, lingkungan Lapas dan asupan energi berhubungan terhadap status gizi narapidana, sedangkan kepuasan penyelenggaraan makanan, serta asupan protein, lemak, dan karbohidrat tidak menunjukkan hubungan yang signifikan. Background: The lack of proper food services, clean sanitation, and adequate nutrition for prisoners in overcapacity prisons is a major cause of nutritional problems. Objective: This study aims to analyze the relationship between satisfaction with food service, prison environment, and macronutrient intake with the nutritional status of prisoners. Method: This research employed a quantitative method with a cross-sectional study design. A total of 81 prisoners were selected through purposive sampling at Class IIB Prison in Sumedang Regency. Data collection involved questionnaires, measurements of height and weight, and 2x24-hour dietary recall interviews. Results: The results showed that more than half (53.1%) of the subjects were dissatisfied with the food service in the prison. Additionally, (50.6%) of the subjects reported feeling uncomfortable with the prison environment. More than half of the subjects also experienced a deficiency in nutrient intake, including energy (63%), protein (86.4%), and carbohydrates (85.2%). Meanwhile, (72.8%) of the subjects had an adequate fat intake. Based on the chi-square test, a significant relationship was found between the prison environment (p-value = 0.000) and energy intake (p- value = 0.028) with the nutritional status of the subjects. However, no significant relationship was found between satisfaction with food service (p-value = 0.445), protein intake (p-value = 0.381), fat intake (p-value = 0.053), and carbohydrate intake (p-value = 0.192) with nutritional status. Conclusion: Thus, the prison environment and energy intake are associated with prisoners’ nutritional status, while food service satisfaction, protein, fat, and carbohydrate intake show no significant relationship.
