    Abstract

    Hiperemesis gravidarum merupakan kondisi serius yang memerlukan penanganan tepat untuk mengurangi komplikasi pada ibu dan janin. Penelitian ini bertujuan untuk mengembangkan produk Gemas (Gummy for Hyperemesis) berbahan dasar buah nanas dan daun mint sebagai alternatif non-farmakologis untuk mengatasi gejala hiperemesis gravidarum. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan empat formula berbeda berdasarkan konsentrasi buah nanas (0%, 50%, 55%, dan 60%). Hasil uji hedonik menunjukkan formula GM3 (60% nanas) memperoleh skor tertinggi pada parameter warna (5,88), aroma (5,19), dan rasa (5,88). Analisis kandungan gizi formula ini memperlihatkan kadar air 64,69%, protein 1,28 g, lemak 0,53 g, karbohidrat 33,12 g, dan vitamin B6 0,94 mg per 100 g, yang belum optimal untuk menangani hiperemesis secara efektif. Analisis tekstur menunjukkan nilai hardness 2079,19 gf, gumminess 1604,87 gf, chewiness 6326,44 gf, dan springiness 3,94%, yang menandakan perlu perbaikan tekstur. Estimasi harga jual produk sekitar Rp 3.500 per takaran saji (8 g), lebih terjangkau dibanding produk sejenis di pasaran. Kesimpulannya, produk Gemas berpotensi sebagai alternatif fungsional untuk membantu meredakan gejala hiperemesis gravidarum, meskipun diperlukan penyempurnaan pada aspek tekstur dan nilai gizi produk. This study aims to develop Gemas (Gummy for Hyperemesis) products based on pineapple fruit and mint leaves as a non-pharmacological alternative to overcome the symptoms of hyperemesis gravidarum. The study used a completely randomized design (CRD) with four different formulas based on pineapple fruit concentration (40%, 50%, 55%, and 60%). Hedonic test results showed that formula GM3 (60% pineapple) obtained the highest score on color (5,88), aroma (5,19), and taste (5,88) parameters. Nutritional content analysis of this formula showed 64,69% water content, 1,28 g protein, 0,53 g fat, 33,12 g carbohydrate, and 0,94 mg vitamin B6 per 100 g, which is not optimal to effectively treat hyperemesis. Texture analysis showed a hardness value of 2079,19 gf, gumminess of 1604,87 gf, chewiness of 6326,44 gf, and springiness of 3,94%, indicating the need for texture improvement. The estimated selling price of the product is around IDR 3,500 per serving size (8 g), which is more affordable than similar products in the market. In conclusion, the Gemas product has the potential as a functional alternative to help relieve symptoms of hyperemesis gravidarum, although improvements are needed in the aspects of texture and nutritional value of the product.
