Abstract

In the competitive Food and Beverage (F&B) industry, effective inventory and purchasing management is essential to ensuring operational efficiency and business sustainability. XYZ Coffee has experienced recurring issues, such as manual stock opname, the absence of Standard Operating Procedures (SOP), and inefficiencies in the purchasing process, resulting in stock imbalances, inaccurate financial records, and increased operational costs. This research aims to improve the stock opname and purchasing processes at XYZ Coffee using a combination of Business Process Improvement (BPI) and Action Research. The study includes process analysis (As-Is), redesign (To-Be), simulation, and evaluation of operational performance. Action Research supports continuous collaboration with stakeholders throughout the implementation of improvements such as the introduction of a Point of Sale (POS) system and restructuring of purchasing roles. The results indicate a 70% reduction in process time, with a significant cost efficiency reflected in the decrease of Cost of Goods Sold (COGS) from 54.9% to 38.2% and Operating Expenses (OPEX) from 34.6% to 16.4%. These findings demonstrate that integrating BPI with Action Research effectively enhances transparency, accuracy, and operational efficiency in F&B businesses.
