Abstract

Penelitian ini bertujuan untuk menganalisis strategi yang tepat dalam mengelola kesenjangan keterampilan (skill gap) pada staf baker di PIPINOS Bakery. Metode yang digunakan adalah kualitatif deskriptif dengan teknik pengumpulan data melalui wawancara dan kuesioner. Analisis SWOT diterapkan untuk mengidentifikasi faktor internal dan eksternal yang memengaruhi kinerja staf baker, sedangkan Matriks IE digunakan untuk menentukan posisi strategis perusahaan. Hasil penelitian menunjukkan bahwa PIPINOS Bakery berada pada kuadran I dalam Matriks IE, dengan total skor IFAS 3,68 dan EFAS 3,60, yangmengindikasikan strategi pertumbuhan dan pembangunan (grow and build). Sementara itu, analisis SWOT menempatkan PIPINOS pada kuadran III, yang mendukung strategi turnaround dan menunjukkan adanya kelemahan internal, seperti kesenjangan keterampilan staf, kurangnya program pelatihan, dan tingkat turnover yang tinggi. Untuk mengatasi hal ini, direkomendasikan beberapa strategi, yaitu pelatihan terstruktur bagi staf, pemberian insentif untuk meningkatkan motivasi, penciptaan lebih banyak peluang belajar dan kolaborasi dengan institusi akademik, serta pengelolaan beban kerja yang lebih efektif. Implementasi strategi ini diharapkan dapat mengurangi kesenjangan keterampilan, meningkatkan kinerja staf, serta menjaga kualitas dan konsistensi produk di PIPINOS Bakery. This study aims to analyze the right strategies in managing the skill gap in baker staff at PIPINOS Bakery. The method used is descriptive qualitative with data collection techniques through interviews and questionnaires. SWOT analysis is applied to identify internal and external factors that affect the performance of baker staff, while IE Matrix is used to determine the strategic position of the company. The results show that PIPINOS Bakery is in quadrant I in the IE Matrix, with a total IFAS score of 3.68 and EFAS 3.60, which indicates a growth and build strategy. Meanwhile, the SWOT analysis placed PIPINOS in quadrant III, which supports the turnaround strategy and points to internal weaknesses, such as staff skills gaps, lack of training programs, and high turnover rates. To address this, several strategies are recommended, namely structured training for staff, providing incentives to increase motivation, creating more learning opportunities and collaboration with academic institutions, and more effective workload management. The implementation of this strategy is expected to reduce skills gaps, improve staff performance, and maintain product quality and consistency at PIPINOS Bakery.
