Abstract

Kesadaran kesehatan semakin meningkat setelah pandemi COVID-19 sehingga pelaku usaha juga perlu mengambil langkah strategis untuk menjaga keberlangsungan usahanya dengan menyesuaikan perubahan perilaku konsumen yang mencari produk yang berfokus pada nilai kesehatan. Penelitian ini bertujuan untuk mengetahui dan menganalisis perubahan perilaku konsumen, dan eating habits pada konsumen healthy bakery di Bandung, mengidentifikasi faktor individu dan sosial yang dapat mempengaruhi terbentuknya eating habits. Desain penelitian menggunakan kualitatif deskriptif dengan metode atau pendekatan studi kasus. Pengumpulan data dilakukan dengan wawancara, observasi, studi literatur dan studi dokumentasi. Hasil penelitian menunjukkan bahwa terdapat perubahan perilaku konsumen yang berorientasi pada nilai kesehatan termasuk dalam memilih produk makanan. Terdapat beberapa perubahan eating habits yang terjadi pada konsumen healthy bakery baik dari jenis makanan yang dipilih, frekuensi makan, hingga jumlah porsi konsumsi. Eating habits seseorang dapat terbentuk akibat faktor individu dan sosial, yang meliputi pola makan, kegiatan, preferensi makanan, tingkat pengetahuan, waktu dan harga, parental feeding behavior, kebiasaan makan di rumah, sekolah, makan di luar, pengaruh teman, dan tekanan dari media sosial. Health awareness is increasing after the COVID-19 pandemic so that businesses also need to take strategic steps to maintain their business continuity by adjusting changes in consumer behavior that seek products that focus on health values. This study aims to determine and analyze changes in consumer behavior, and eating habits in healthy bakery consumers in Bandung, identify individual and social factors that can influence the formation of eating habits. The research design uses descriptive qualitative with a case study method or approach. Data collection was carried out by interview, observation, literature study and documentation study. The results showed that there are changes in consumer behavior that are oriented towards health values, including in choosing food products. There are several changes in eating habits that occur in healthy bakery consumers both from the type of food chosen, the frequency of eating, to the number of consumption portions. Eating habits can be formed due to individual and social factors, which include diet, activities, food preferences, level of knowledge, time and price, parental feeding behavior, eating habits at home, school, eating out, influence of friends, and pressure from social media.
