Abstract

Indonesia has unique characteristics of a legendary culinary heritage that contains historical values from the Dutch colonial era, one of these cultural heritages is the concept of a rijsttafel banquet, an acculturation of the archipelago's indigenous culture with the Dutch during the colonial period which changed the socio-cultural order and behavior patterns of the Dutch East Indies people , the existence of rijsttafel needs to be preserved as an intangible cultural heritage that needs to be introduced to the millennial generation. The concept of a rijsttafel-style banquet will give a touch of heritage experience along with the impression of a nuance of nostalgic romance for tourists when enjoying the delicacy in every rijsttafel dish served on the dining table and the warmth of conversation with loved ones and loved ones while knowing and feeling the value and philosophy of history that happened in the period before Indonesian independence.
