Abstract

Fitria Nur Anggraeni, 1601530, "ANALISIS KINERJA KITCHEN ADMIN DALAM SISTEM DAILY MARKET LIST YANG DIKELOLA DI DAPUR HOTEL CROWNE PLAZA BANDUNG". Di bawah bimbingan Sri Marhanah, S.S., M.M. dan Dr. A.H. Galih Kusumah, M.M. CHE, Bandung merupakan salah satu kota di Indonesia yang potensi pariwisatanya paling besar baik dari segi budayanya, segi bangunan bersejarahnya, serta makanan khasnya. Food and Beverage Product Department merupakan salah satu departemen yang memiliki tanggung jawab dalam pengadaan barang baku makanan yang dibutuhkan serta proses penyimpanan bahan baku yang baik dan benar. Kitchen Admin bertanggung jawab atas berjalannya kegiatan di hotel yang menyangkut dengan sistem dan manajemen di kitchen hotel. Tujuan penelitian ini adalah untuk menganalisis sejauh mana peran Kitchen Admin dalam sistem Daily Market List yang diimplementasikan di dapur Hotel Crowne Plaza Bandung. Penelitian ini menggunakan pendekatan kualitatif dengan wawancara mendalam dan observasi sebagai metode pengumpulan data. Narasumber penelitian terdiri dari staf dapur, dan manajemen hotel yang terlibat dalam sistem Daily Market List. Hasil penelitian menunjukkan bahwa Kitchen Admin memiliki peran penting dalam mengoordinasikan dan memfasilitasi pengelolaan Daily Market List. Rekomendasi dari penelitian ini meliputi berkoordinasi dengan departemen IT manajemen event, formulir item tidak dikirim supplier, dan sistem real-time inventory. Under the guidance of Sri Marhanah, S.S., M.M. and Dr. A.H. Galih Kusumah, M.M. CHE. Bandung is one of the cities in Indonesia with significant tourism potential, encompassing its rich culture, historical architecture, and unique cuisine. The Food and Beverage Product Department is responsible for procuring the necessary food ingredients and ensuring proper storage processes for raw materials. The Kitchen Admin is accountable for overseeing hotel activities related to the system and management in the hotel kitchen. The purpose of this research is to analyze the extent of the Admin kitchen’s role in the Daily Market List system implemented in the kitchen of Crowne Plaza Hotel Bandung. This study employs a qualitative approach, utilizing in-depth interviews and observation as the data collection methods. The research narasumberts consist of kitchen staff and hotel management involved in the Daily Market List system. The research findings demonstrate that the Admin kitchen plays a vital role in coordinating and facilitating the management of the Daily Market List. Recommendations from this research include coordinating with the IT department, event management, addressing issues related to item forms not being sent to suppliers, and implementing a real-time inventory system.
